It sprinkled a bit while Sugar and I were taking a walk, and (of course) stopped as soon as we got home.  Hopefully we'll get a nice steady rain today.

I have never made a casserole.

My wife makes casseroles.

She puts stuff into a pot, cooks it and then I eat it.

That's all I know about casseroles.

BTW: My wife is an excellent cook.

Nowadays they have recipes for casseroles from scratch down to handmade pasta. That's a little too ridiculous, and frankly, they don't taste anywhere near as good.


That's the thing about comfort foods.  They rarely work when given the "gourmet" (for lack of a better word) treatment.  That's not what they're about.  Yes, one should stick close to a proven recipe, and much badness can be avoided or minimized, but you mustn't screw around with their basic character.

Life has been very busy lately. So, I will likely be E&T for most of the day.

Tomorrow is crazy day. CAT scan first thing to make sure the cancer is gone. Then the job interview.

Casseroles:  Oh!  My!

My favorite casserole is a "Corn and Tomato" casserole.   Pre-heat your oven to 350 degrees.  Take a number 2 can of diced or crushed tomatoes (you'll use the liquid, as well), a (smaller-than-no.2-sized) can of white corn kernels (drain off the liquid), dice a medium or small (depending on how you like it) onion, cut up some green pepper and mix it all together in a bowl.  The green pepper is more "to taste" and for color.  You also need saltines...and most are packaged with either two bags or four bags (those longish, squarish bags).  Use HALF of one of those bags, crumble them all up and add to the mixture.

Grease (i.e., use butter) a casserole dish (the rectangular kind...not large, though***), add the mixture and dot the top with pats of butter.   Put into the pre-heated oven for 30 minutes.

Le voila!   A fabulous "go-with" that tastes absolutely scrumptious.

It's also better "the next day" after it has been refrigerated and re-heated.  I don't know why.

A friend of mine once visited and made a squash (yellow, crookneck) casserole.  That also involved onions plus a can of Campbell's cheddar cheese soup.  I didn't pay close attention at the time and have pleaded for the recipe over the past 30 years to no avail.  He says he doesn't remember it, but I can assure you there's no way he could forget it...it was absolute heaven on a fork.  Ah, well.


*** The size of the dish I use is "roughly" (or approximately) 10 inches long, 4.5- 5 inches long, and approximately 4.5 inches deep.

Had a very fun time last night.

Traffic was good so I made it to Lake Oswego in just under and hour. Amazing, for 5 o'clock traffic!

As I drove up to former DR JMK's home, I saw him drive away. My first thought was "Uh, oh, he saw me coming." But come to find out he was just heading to Portland to pick up former DR Edisaurus and her everlovin' Greg. So I visited with JMK's wife Betsy until they returned.

For those who have met her, I don't have to tell you how delightful and charming Betsy is! And oh, what a great cook! Main dish was a meatless spaghetti with almonds. I believe I had two or three helpings, it was quite yummilicous!  ;D

Dessert was coffee cake...next to chocolate, this is my favorite kind of cake!

Finally meeting former DR Edisaurus and her everlovin' DH Greg was such a wonderful thing! Fine people, the both of them! I hope they have great fun exploring Portland today and much success with the new documentary "Doc Pomus." I am very disappointed at not being able to attend the showing on Friday night  :(   


One additional highlight was visiting, petting, and hugging dogs Beejee and Blanche! Such beauties! I wanted to take them both home with me!! Normally JMK locks them up in the dungeon when guests come over, for fear of them slobbering on people...however, I begged Betsy to let them roam free with us for the entire evening! Oh gosh, I just love those two dogs!

This weekend I will post photographic evidence of our get-together!

Gas is $3.93 in these here parts. I read the other day that the prices are expected to come down soon, however my gas tank was empty so I had to pay up  :'(

Of course, when DougR mentions that gas in his country is close to $10.00 a gallon...well, I guess I can't complain too much! Yikes!

I'm at a Starbucks all day as I wait for my car to be repaired.  It will be a LONG day.  Getting work done on a musical I'm working on.  Unfortunately, the lyrics are just OK, so phrasing is a challenge.  But it's fun and I'm enjoying having a go at writing.

Interesting!  $4.97 in California, $5.99 in some areas of the east, and $3.99 in Washington.

TOD: Casseroles? Mom used to make them, and in the best worst way possible. Open a can of cream o' something soup, add pasta and canned meat, some canned cheese and cook. That's the way it was back then. Of course, they tasted great, despite all the canned food involved. Maybe it was all the sodium.

Since I moved to Texas, I have discovered the local enchilada casseroles, with cheese enchiladas rolled up and laid out in the pan and then topped with sauce and, of course, more cheese. A gooey mess. And great.
