*Although, you can find Demi-Glace Gold on some supermarket shelves.  It's available in Chicken, Beef, Veal, Fish, Turkey, Veggie and Mushroom varieties.  It's not cheap, but it's also not exactly expensive either, but it's well worth the investment - especially since demi-glace does indeed take hours of time to make from scratch.

While I never was, and never will be, a gourmet cook on the level of DRs Jose and SWW, one of my regrets about working full time with a long commute is that I don't have time to cook like I used to.  Wonder if I'll remember how, once I retire?

But Ginny, I don't consider myself to be a "gourmet" cook at all.  I'm a home cook who prefers to work as much as I can from scratch.

I just happen to be using my day off to make some stock.  

I'll probably also get some laundry done, but not using the same pot.   ::)

Oh, Jose, I don't think you're right about marrow and gelatin being the same stuff.  The marrow in bones is where blood cells are manufactured.  Gelatin comes from the colligen, which is the soft stuff hiding between all the the calcium in the bones, and can also be found in muscle tissue.  There's colligen in the marrow, but lots of other stuff there, too.  (When making a pot roast, the temperature should be low in order to release the colligen in the meat - high temps makes the stuff sieze up and toughen, not desirable.)

Pigs knuckles and feet are loaded with colligen, and is where we used to get the gelatin used in desserts like mouses and Jell-O.

Ah, a customer!

I don't know that I was ever asked a strange question at a TV audition.  At a movie audition I was asked if I had a problem doing nudity and showing my rear end - I said I did.  They offered me the part anyway, and just assumed I'd do it and do the nudity.  When they wouldn't back off, I passed.

I tried to make stock from scratch - I used three one dollar bills, but I didn't think the resulting broth was on the money.

Just saw a promo for an "unforgettable" and "must see" and "been waiting for" episode of a series that just started in November.

How many episodes (or seasons) does it take for any of the other DR's before you are really invested in the characters....enough for you to really care about what happens to the people on the series....

How many episodes (or seasons) does it take for any of the other DR's before you are really invested in the characters....enough for you to really care about what happens to the people on the series....



If they don't get me in the first episode I watch, they generally never get me (one exception -- I've recently been watching "Numbers"...either Rob Morrow has settled into his character in a less annoying way, or the focus on the other characters has balanced nicely with his making him tolerable to me).

But if a show hooks me from the git-go, every show after that is a "must see"....so any time they trumpet an episode, I know it's gonna be terrific (hopefully).
