What an interesting coincidence! The book I'm reading,
The Lee Bros. Southern Cookbook, has several recipes involving muscadine grapes. There's
Grape Hull Pie (pages 454-455),
Scuppernong Preserves (132-134),
Scuppernong Sake (55), and muscadine wine is included in their recipe for
Johns Island Iced Tea (43-44).
Oh, and there's also
Scuppernong Grape and Hot-Pepper Roasted Duck, (323-324). Although that recipe says "1/3 cup Scuppernong Preserves
or other top-quality grape preserves," which I assume doesn't mean Welch's.
