Title: THE MINCING TUNA
Post by: bk on July 15, 2008, 12:52:20 AM
Well, you've read the notes, the notes minced about like so much fish, and now it is time for you to post until the mincing cows come home.

Topid of the Day:  the only cold pasta dishes that I can think of (at this moment) that I've had have been store-bought macaroni salads...usually with a bit too much mayo, but still they've tasted good. :) I just don't think I've had anything that special or fancy.

bk, thanks for the tuna pasta recipe!   :)   It saved me from trying to dig through the OLD archives.

I was looking at the column archives and noticed a missing entry about three days ago - there was just an empty space.  So, I went back to where I type in the notes and looked and sure enough I hadn't put the title of the notes in the proper place - ADO.  So, I fixed that and now it's there.  So, I scrolled down to see if there were any other instances of that, and sure enough I found a hole for an entry last year - it took me a while to find it in the board archives (which is the only place I'd have the title reference), but I found it and fixed that one, too.  Now I'm going to go back and look through the entire column archive, because I think we had a couple of these a long time ago and neither Bakalor nor I could figure out why there'd be an empty hole instead of the link to a column - now I know, so I can fix them so our archive is completely complete.

The trick for bk will be maintaining his current strict regimen whilst traveling to and staying in NYC.

Luckily, it's a short trip - the food part will be easy, but the running part won't - although I'll try to get up really early on Friday and Saturday to get some sort of run in.  If not, I'll have three days off from running and I'll be very good, food-wise.  There simply won't be enough time to pig out.

Many people do not know that the original draft of "Hard-Hearted Hannah, the Vamp of Savannah" was actually INDURATE Hannah.   But it didn't have the right number of syllables.

Good morning, all! I'm listening to the score of this NYMF show I've been asked about doing. It's quite nice. I like the singers, and I wonder who they may be.

Yesterday, I got a lovely note from Miss Kim Criswell about how well the chart I did went over, and I'm thinking about traveling out to Long Island on Saturday to hear the rehearsal of the new chart I did for Daniel Rodriguez. It's from 2-5 and I could be back to the City by 8 pm.

DR SWoodyWhie, I also add my appreciation for your acting as secretary on the "Name Game." Thank you.

Today, more Dillngham corrrspondence at the NYPL Rare Books and Manuscripts Division. I'll head over around 10:30 or so.  I need to read the NYMF scrip[t this morningand begin this chart for Kip Wilborn.

First, more coffee.

Which are not to be confused with Whacky Noodles, those long, tubular, plastic swimming toys sold at good stores everywhere (like the supermarket where I work).

re: BIG BROTHER

DR RonP, re: the comment i made yesterday asking if you were doing live feed spoilers.  I actually didn't mean the feeds. I meant if you were reading the spoilers. I don't watch the feeds either. Just read.

My favorite site is Dingo's hamsterwatch. He updates a few times a day. But only a few paragraphs. He is great.

http://www.hamsterwatch.com

For a more detailed description of what is going on i like television without pity (the live feed discussion thread). Just go to the end.

I've been trying to find if john (formerly of canoe) is posting anywhere. If i find out i'll link it.

But those are the only 2 i read each day.

In the notes, our esteemed BK included the following ingredients:

Quote
1 pound of large elbow macaroni
Mayonnaise (Best Foods ONLY)
1 can Bumble Bee all-white tuna in water (or any brand you like – but in water)
1 red onion

Silly BK probably doesn't remember that Best Foods is not sold as Best Foods east of the Rockies.  On this side of the continental divide, it is known as Hellman's.

Yes, we sell Hellman's at the store.

But I've been known to make my own mayo.  By hand.

It's simple: whisk an egg yolk with a whisk until it's nice and sunny yellow, add a little salt and vinegar (or lemon juice), and then ever so slowly whisk in a cup or so of oil, just a drop or three at a time at first, until everything is emulsified.  (What kind of oil you use greatly affects the flavor of the mayo.)

Add some garlic to the mayo while you're whisking, and you've got aioli.

But stick with the Hellman's/Best Foods for BK's Tuna Pasta Salad recipe.  They not only bring out the best, but they also have more air whipped into them, which alters the taste.

I'd whip in that much air, but my arm gets worn out too soon.

A very simple recipe for cold pasta:

Cook up some pasta, preferably a small type such as penne.  Cool it down.  Add pesto (store-bought is fine) and some chopped black olives.  Finish with a little freshly grated Parmesan Regiano cheese (not the stuff from the green can, but the type you grate yourself).

From Yesterday by JMK, "As a former manager of a couple of temp services, I can tell you there's nothing more dreaded than the client calling and saying, "Please replace....".  Usually you're home free if you make it past the first day QC (Quality Control in temp service lingo) and then end of first week QC calls."

I hadn't even been put on the phones yet so they didn't have the chance to hear me handle a call.  Interesting, huh?

Thanks for that info. I did not remember that Best Foods was the same as Hellman's (which is what i use). Although i prefer the light blue one (i think it's called low fat).

I don't really eat cold pasta salads.

But i make a very easy tuna casserole recipe called EASY TUNA CASSEROLE, which is so good.

You cook egg noodles (more than 1/2 a package). I then in a wok mix 1 or 2 cans of tuna, 1 can of cream of mushroom soup, a bunch of cheese slices, and some frozen veggies. I add the noodles when they are cooked. You mix it up and in 10 minutes the whole dish is ready!

(btw this quantity would be enough for quite a few people to eat). The reason i make so much is because the whole can of soup is really enough for 4+ people.

Good morning everyone!!!! It's been a while since I've been on, but it's really good to be back. For a comment any way. Well, first things first, I guess i have to say somthing about the MINCING TUNA, so I LOVE TUNA, but pasta and i are age old enemies. Just ask Vixmom, she knows. Also, Mr. Bruce, I was listening to the Last Starfighter CD (GOD I love that Father to Son song, it's so evil, it's great!) and I was wondering if you knew who was the person who played Zur on the CD. Because that man resally sounds evil, he should be like a bad guy's voice actor.

This might be a dumb question.

But re: making mayo.

I just remembered why i had never made it myself. Because of the raw eggs.

I think i've asked this before (in reference to another recipe). But is it okay for everyone to eat raw eggs (that are in the homemade mayo)?

The eggs should be as fresh as you can get, of course.  And get them from a reputable source.

There are pasteurized egg products out there, as well, but I don't know how good your results will be, since I've never tried them.

I always just get them from the local grocery store.

I guess with the raw eggs, the mayo probably only lasts for a day or two.

[sigh] I had a rude realization this morning that I'm running behind on these Criterion reviews. Due to the middle man in the arrangement of sending the review copies, the review of MON ONCLE ANTOINE went up almost a week late!

TRAFIC, which comes out in stores today, is next on my agenda, but it's two discs, and I'm going to have to work like a dog today to get all of it watched and written up to make street date. Thankfully, the film itself is not very long. It would have helped if I had seen it before. With MY ONCLE ANTOINE, I could get the review started before spinning the disc because I had seen the movie before in an international cinema class I took.

Not so with TRAFIC (though I do know it's the last of the Hulot films).

Good Morning, once again!

I'm back.

I headed on down earlier to Chelsea to get my hair cut.  It had been about six weeks since my last cut, and even though there was a time in my "youth" when I actually wore my hair long(er), I really don't like it long(er) now - especially in the summer.  When I walked in, the barber gave me that, "You haven't been here in a while," look, and then stated that fact out loud.  I got settled into his chair - "1 on the sides, 3 on the top" - and about 20 minutes later... Aaaahhh... :)

After getting my hairs cut, I headed up to Ripley-Grier to briefly(!) meet up with a young woman I had worked with a couple of years ago.  Actually, she was still a "girl" when I worked with her.  She was playing "Young Eleanor" in Eleanor: An American Love Story at Ford's Theatre back in 1999.  Since then, I've actually seen her mother on a semi-regular basis since she part of the volunteer staff at SETCs, but I hadn't seen Emily since closing night at Ford's.  Well...

Her mother told me a few days ago that Emily had been called in to audition for the role of Christine in The Phantom of the Opera.  She had played the role last year during it's college/university premiere at Baldwin-Wallace College, and it happened that some of the staff from the Broadway production not only came in to see the production, but had also come in during rehearsals to provide some coaching.  Apparently, there's an "immediate need" right now for the tour, and Emily got a call to come in.  Of course, she's currently in the midst of a summer stock contract in New Hampshire, so it's been quite the scramble for her - and her mother - over the past 48 hours.

In short, she flew in last night, booked a warm-up room for this morning at 9:30, auditioned at 10:00, and then flies back to NH at Noon... Then goes into tech for Millie this afternoon.  Whew!

I happened to make it up R-G just as she was finishing up her warm up.  We had a very brief reunion, but we all ended up sharing an elevator with the music supervisor and the production manager on the way down to the studio, so that was nice.

I would have stayed to listen to her through the door, but I had a feeling I would have been a distraction.  -And since they were have an open call for The Little Mermaid today, there were lots of actors and actresses walking the halls looking stressed and emitting stress.   ;)

But it was great to see her again, albeit briefly, and, I hope that by now she's already in a cab heading back to LGA to catch her flight back to NH.

Hello DR JOSE....wow that girl is BIZZY!!

And that was not even the half of it...

She's currently the dance captain for the company she's working for in NH.  On Friday, she was informed that the actress playing the Mistress in Evita was withdrawing from the show due to illness.  She was asked to step into the role - even though she had not ever rehearsed it.  Of course, since she was the featured tango dancer, she then had to reblock all the dances in the show.  -And she had to do all of that and deal with making all the arrangements to get to NYC on Friday afternoon!  She went on as the Mistress that night, and then still had to prepare her track in Millie the following day.

My mistake, BK, that Steve Reeves dubbing info is in my upcoming interview with another actor who worked in Italy. I just looked at my draft and the actor he mentions as dubbing Reeves, at least in one film, is Frank Lattimore. I know there was was one other dubber for Steve Reeves as well, but do not recall the name.

If things work out, in the near future I will be interviewing many of the men and women who dubbed over in Italy. It is a subject that has always interested me.

As for the Topic of the Day...

I used to make some variation of a cold orzo - the pasta that looks like rice - salad.

The basic version basically involves cooking the orzo until it's done, draining, and cooling; then adding a briefly cooked/blanched package of frozen peas and carrots.  *And to save time, you can even cook the peas and carrots at the same time you cook the orzo - just add it during the last few minutes of cooking time.  Then dress the whole thing with bottled Italian dressing.

For fancier versions, I've toasted part of the orzo in a dry skillet to give it a little color.  I think my favorite combination now involves adding dried cranberries, chopped hazelnuts, crumbled ricotta salata (or feta cheese), some mache and a light dressing of red wine vinegar and olive oil.

There isn't anything on the television schedule for tonight that makes my heart zing.

That's fine by me.  I've been re-viewing a lot of Disney and Pixar DVDs of late.  I haven't done any real writing for quite some time, and that commentary about communities and individuals as seen in Pixar films is the best idea I've had for writing in a long time.

Of course, I don't have any idea where I'd publish it, but that's besides the point.

Untried, but pending as it sounds dee-lish:

Mediterranean Orzo Salad

Ingredients
•   1 cup orzo uncooked
•   3 tablespoons red onion finely chopped
•   1 cup fresh tomatoes seeded and chopped
•   1/4 cup chopped celery
•   2 tablespoons chopped fresh basil
•   2 tablespoons olives pitted and finely chopped
•   2 tablespoons capers
•   1 teaspoon grainy spicy mustard
•   1/4 teaspoon granulated sugar
•   1 tablespoon balsamic vinegar
•   2 tablespoons garlic oil
•   1/2 teaspoon salt
•   1 teaspoon freshly ground black pepper
•   3-1/2 ounces chevre cheese crumbled

Directions

1.  Bring a large quantity of water to a boil and cook orzo just until tender.
2.  Drain well and allow to cool then mix with onion, tomatoes, celery, basil, olives and capers.
3.  Whisk together mustard, sugar and vinegar then gradually beat in oil until emulsion forms.
4.  Pour vinaigrette over pasta mixture and season with salt and pepper then chill salad.
5.  When it is cold mix in the crumbled cheese and serve.

JulieC, I'm not sure if you misunderstood me or I misunderstood you, but the QC call is between the temp service and the client.  You need to check with them to see if everything's "working out."  On a temp-to-hire situation, the SOP is to check in the first day, and then at the end of the first week, and if everything's fine by the end of the first week, usually you're home free.  What I bet happened is they weren't able to get through to whomever on your assignment on your first Friday, and then that scumbag (because that's obviously what they are, no?) called on Monday to complain and told them you needed to be replaced ASAP, hence your Staffing Coordinator showing up on your assignment, which is very unusual (at least it was back in the day).

We can't even say phrases like "it's time for....", since he's figured out that's how "walkies" usually starts.  The dog is scary sometimes.   ;D

He knows what he wants and he knows when his "mind control" on you has worked.

You'll never outsmart him.

If you do, he'll piddle on your floor!

Now you're scaring me.  "Mind control" is the exact phrase we use to describe the dogs' power over us.  :)

I'll reiterate again, that since starting this diet and jogging routine I have not had one single evening of heartburn or acid reflux no matter how many onions or how much garlic or spicy food I consume.  And you'll all be happy to know that despite my loathing of water, I've been drinking two bottles a day and I'm down to two Diet Cokes a day.  I have never before only had two Diet Cokes in a day - always three to six, so that's a major thing, I should think.

I think the most important thing in any such regimen is positive reinforcement.

Good for you, Bruce!  Keep it up!

That said, I commend you on breaking the "coke" habit, diet or otherwise.  Diet Coke has caffeine, yes?  Or do you get the non-caffeinated variety?  Caffeine is the hardest addiction to break since it's such a pleasurable experience and, generally, not unhealthy.

Make notes of your changes in diet, mood and physiological changes. Those notes will be quite eye-opening as the weeks pass and they'll motivate you even further, IMO.

Oh, okay, I understand now.  However, I had felt that it was not proper business etiquette to show up at my work place.  They should have called me Friday night after work or if they didn't know till Monday, they could have left a message with someone for me to call them as soon as possible.  I felt really humiliated because people were asking me where I was going and why I was packing up to leave.

DR Vixter, it is nice to see you posting.

DR Jennifer, I used to make my own mayo, it was light and very tasty.  I rinse my eggs well with hot water before breaking them, when the eggs will be raw I also wash them with soap.  I stopped making my own mayo because I enjoy Hellman's/Best Foods so much.  If I had to use a different brand I would make my own again.

RE: HOW DO I SOLVE A PROBLEM LIKE MARIA (the canadian search for the new Maria in the new toronto production of the Sound Of Music).

The show is okay. But there are so many things that could make it so much better. They keep getting rid of 2 at a time. Which i find to be a lot.
When you compare it to the Search for Elle woods show, i definitely prefer that one. At least there they are doing scenes from the show. Singing songs from the show.

On M? they are singing random songs that simon (the head judge) chooses. And they really tell us nothing about who would be good as maria. They don't do any scenes from the show (they do sing group numbers from the show, but it doesn't show us each one alone). They don't act with the other castmates who are already chosen.

And ALW is not there (he is coming next week), which should make things a lot better.

The weird thing is last night there was a B3. And the judges (and previous fan fav) was in the bottom. As was the larger girl.

So i knew they would keep their fav.

Surprisingly my fav is now one of the top contenders. She was in the bottom 2 or 3 weeks ago. But since her sing-off (the bottom girls sing off), she has been in the top every week.

And another girl who i don't think is right for the show, was in the top 3 last night (only 4 are left now).

Apparently the fans actually get to decide the winner (with 2 remaining). Before then the head judge can always keep their fav.

As with fruits that have skins, before cutting through them. I wash the egg shells.

Making my own mayo was healthier, I'm just a fan of Hellman's.  Keith uses the light stuff, I don't care for it.  I rarely use it at home anymore except in egg salad.  For sandwiches I spread soft avocado instead of mayo & it is very healthy.

Then I watched Jacques Tati's TRAFIC. Unquestionably the weakest of his four Hulot films. Yes, there are some funny set pieces, but I found myself waiting inordinately long periods of time for them amid a lot of set-ups that did not have payoffs. And the flow from sequence to sequence was also poor.

Welcome back, DR Ginny!   What did the doctor say?

Thanks, DR Singdaw.  Today was just a trip to the lab for a blood test in preparation for the doctor's appointment tomorrow.  After the lab, we went to Kroger, where Richard parked me at Starbucks to drink coffee and read a book while he did the grocery shopping.

I re-watched the movie "Hairspray, the Musical" last night.

It's so much fun, most of the way through.

I'm still not "getting" Travolta's take on Edna Turnblad.  Edna was dynamic in the non-musical, and Travolta never gets there for me.  In that finale, when Edna cuts loose and dances, I just don't feel any enthusiasm like I do for all the others who had segments of the same number.

Hi Jane, you sweet thing.   I get to wear my bright purple cast for an entire month!!!!  I don't know what treat I have in store after that, but I was talking to DRLaura earlier and told her that even though my foot is getting clausterphobic and would like some air, I will admit that this cast is easier to move around in and sleep in.  I guess I can't complain really!  I'm lucky to have the nice people on this here site in my life.

Ah okay i'm glad you wash the shells and not the eggs!

When you said you wash the egg i thought you meant the actual egg! :)

Better news.  "Big Brother" is not to be renewed here.  One less TV show to avoid.  Now if we can just get rid of the other "reality and idol shows" and give writers and actors some work.

"Wicked" has started here in Melbourne.  Of course two of the cast members are from Oz Idol.  It is so sad for those young people who train for theatre - and have the talent but not the "name"!

On the other hand (and not to argue but to offer a different "take" on it), a lot of people train their whole lives, and invest much of their adult lives, into "making it" in the theater when their chances of success are very slim and/or their talents, bless their hearts, are more hopeful than viable.

And there is the possibility, through such shows as "Idol", that very talented performers who never were able to seriously pursue their dreams get one last (or first) magical chance to break out, be heard and find a career because they're really good.

I've seen a few phenomenal talents emerge from such shows.  I'm not saying the torture I put myself through whicle watching everyone on the shows was worthwhile "because of" the few exceptional performers....but I don't regret having experienced some rare moments.

I could also argue that without the no previous acting experience "Idol" cast members. Mr And Mrs Public may not even get to hear about "Wicked" and the show would not find an audience - and thus the "legitimate" stage people would be out of work as well.

I suspect my dislike of "Blood Brothers" was fueled by the use of "Soap Stars" to bring in the bus parties.

In a way I guess it a bit like the casting of Mr Travolta in "Hairspray".
How else do you get people to see a "film musical"?.
(I've not yet bothered with "Hairspray". I've only played the Broadway cast album once. I did enjoy the Waters film on a "camp" level")

There must be some song (very Mae West) about putting an old key into a new lock (or a new key into an old lock).

This is a "slight" riff on an old Sophie Tucker routine (about her boyfriend Ernie):

"Ernie came to me and said, 'Soph! Soph! I have this 80-year-old key.  So I went out and found me a 20-year-old lock, now what do you think about that'?

"And I said to him, 'Ernie!  When my lock is 80 years old, I will get me a 20-year-old key.

"'And let me tell you something, Ernie! Twenty unlocks 80 a hell-of-a-lot-more than 80 unlocks 20!'"

Thanks Ginny.  There really isn't much for me to do for him.  I can keep the dog hair off the sheets & lean down to pick things up for him.  His only other restriction, not lifting heavy objects, I cannot do.  In fact there are 40 pound bags of salt sitting in my trunk.  A friend will come over and put them in the water softener for us, no way am I lifting them, not unless it were an emergency.
You could, of course, carefully open a bag while it is in the trunk, remove to a container an appropriate amount of salt that you can lift, and put it into the water softener in stages.  But getting a friend to help is much more sociable.

I did indeed sample some of the salsas, and they were all quite tasty.  After checking out the ingredient panels I noticed that they were all very low in sodium, which is a rarity in bottled salsas.  The owner/founder went on to explain how salt is the last seasoning he adds to his salsas since he wants most of the taste to come from the chiles, tomatoes, tomatillos, garlic, etc.  "Salt is cheap, which is why a lot of manufacturers use a lot of it."  I went ahead and took home a bottle of their Salsa Verde Refresco©... Which was a perfectly complement to the mahi-mahi I prepared for my dinner.

**And, yes, the founder/owner had very nice blue eyes.  ;)

It's been a busy day and I was really getting things done, so of course my brother had to send an email jumping in on the family garbage.  Good Grief! Can't they just leave me alone until my trial is over?  Edith thinks I should just block all of them until August.  She also thinks I need to attend a legal pad addicition 12 step program.  I must admit I do use about 25 legal pads when most people would still be using the same one..

Probably.  A couple of nights ago I prepped some chicken thighs (boneless, skinless) as I would for sweet-and-sour, but served the cooked chicken bits with the S.B. Vidalia onion and sesame/ginger dressings as dipping sauces.  Very tasty.

And Saturday I'll be hitting the parking lot pavement again.  Yep, Frank will still be out, and I'm the guy they've tagged to sub for him in the early hours of the morn.

I got a bit of sun, at least.  Not enough to turn me into bronzed godhood yet, but it's a start.

Next, I watched THE BOURNE SUPREMACY on HD-DVD. I had watched the first and third installments of the movie on HD, so I enjoyed watching this middle installment just to have the whole story firm in my head. With years between each of the movies, I tended to forget all the set-ups and relationships from one to the next. It's all clearer now.

The HD-DVD looked just superb. The Dolby Digital Plus sound was fine but just a tad underwhelming. I guess anything would be after listening to BATMAN BEGINS and CLOVERFIELD in Dolby TrueHD over the weekend. Those audio mixes blew the windows out.

I gave you the perfect set-up for a Sophie Tucker joke.  That's a good thing!

Give yourself a break.  A trial is like running a 10 mile marathon, and you need to be good to yourself.  No diets.   No family.  Have a cupcake and meditate.  I have total faith in your abilities, so give 'em hell, and work on the crud afterwards.   I went through this too many times as a paralegal, so I know you have to take care of yourself.  I used to make DR MusicGuy (when we were still together) do the same thing before a concert.  There is enough physical and mental stress that you don't need to put yourself through anymore suffering.  You have nough on your plate right now, dear friend.  Eat well, and get some rest.

OMG! Spoiler -- Big Brother 10 -- OMG!

 ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D

I am really loving this show, thus far.  Tonight's drama was better than I'd imagined.  I was shouting at my TV screen when Jerry -- confronted with the "truth" about Brian by 8 houseguests -- sat there in denial and said he didn't trust any of them.

I was shouting, "You trust BRIAN, Jerry!  And he's making you look like a fool telling everyone how he's manipulating you into doing his bidding!"

Good for Libra for stirring this stuff up and forcing April to confront Ollie!  And good for Ollie!  And good for Jessie and Memphis!  And I'll even throw in a GOOD FOR RENNY, because unless she just hangs herself to spite her face, she's not going home this week.  And even if she hangs herself, I'll go so far as to say she still won't go home because none of them can afford to let Brian stay.

I felt sorry for Jerry.  It was sort of amusing in a bittersweet way to hear him explain why he wasn't wearing any of his military hats -- 'cause he didn't want to shame any of the services when he went back on his word.   I hope he recovers quickly, because I'm certain most servicemen would say that only a fool would stick to his word in the face of betrayal, which is the worst kind of dishonor.

Brian amuses me because he's a Mike Boogie wannabe.  I know they were likening him to Dr. Will, but Brian was too heavy-handed and obvious to be in Will's league.  Brian had delusions of grandeur, walking around and talking to folks like he was Don Vito Corleone promising favors in return for a favor he would call in at some time in the future.

That's the danger of guys falling too much in love with "The Godfather", IMO.  They turn into mooks when they try to "be" like a Corleone.

DR MBarnum, I'm wondering -- naturally -- what your take is on Steven and why he's been "under the radar", thus far.  We hardly see anything of him, which is good.  I recall Season 6 when Kaysar didn't come into his own until, I think the fourth week.  That's when Cappy sealed his own fate and got the boot.  That remains my favorite season, but also my least favorite outcome.

I hope this season continues to live up to the fun I've had with it so far!

 ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D ;D
