Between-services greetings from Norwich Cathedral!  Richard has taken his vestment garment bag back to the hotel and left me here to shop and use the good wi-fi.  When he gets back, we'll go outside the Close for lunch and be back here for the Epiphany procession at 3:30.

Good Oys, all.

And mornings, for those who indulge.  Oy!

Though my back felt increasingly better through the day yesterday, the tricky part is still finding the best ways to lie down in bed, roll over now and then, and of course get up in the morning.  Another hour or so of coffee and ketchuping, and it'll feel better again, and I know from experience that it'll be a couple more days before things are closer to normal.

Good morning, all! My right shoulder is a painful mess, so I'm staying in today. I do need to make a run to the market for a half gallon of milk, and that's as far away from the heating pad that I am going.

I will also finish reading the original libretto for DEAREST ENEMY, titled SWEET REBEL and copyrighted 9/19/24, 363 daysfrom its Broadway opening, to refresh my mind on what a complete mess the third act is. And watch something. Don't know what yet.

I've sent emails to the recording producer about recording dates in September for Dublin, rather than September. Rob is hopefully bringing a Broadway show into town for an August 1 opening.

I don't know where we're going to celebrate my 60th. I'm thinking of all sorts of places but England is at the top of the list. I haven't been in 10 years. Perhaps a guided (Perillo) tour of Italy since my husband is Italian. Hawaii is just too far away and too many planes and flights. If we lived in California I might consider it more seriously. I would love to go back to Dublin but I have a while to think about it and check out prices. We shall see.

Yep. It clearly wasn't the flu. I'm guessing it was a residual of all the stress I continually seem to throw myself into, willingly or not. I don't even want to consider what a shrink would make of that!

Thanks all for the condolences for Bella.  My brother in law takes it exceedingly hard, as many of us can relate to.  Bella did have a very good 13 years, and was very loved.  The still have 3 other dogs, but that doesn't make it easier

Sharon still has a long road to recover completely.  I'm not sure she'll ever be able to lift Callie and give her meds while holding her, but Callie has known her for almost her whole life, so as soon as she wants to try it, I'll give it a go.

I'm doing my laundry, then this afternoon will head to flute choir rehearsal.   We've got a director now and will be practicing twice a month with a regular schedule.   I'm very excited about that.  I think we'll be able to get more people with a regular schedule.

For those who have seen Zero Dark Thirty, I have a serious question.  It seemed to me that Jessica Chastain's character was very one dimensional and it seemed that she really just played one emotion the whole time.   Now, maybe I'm not giving her enough credit or maybe that's harder to do that than I think it is, but I'm surprised she's favored for Best Actress in a Drama.   I'm curious about what others think who know more about such things than I do

Finessed yesterday's writing, and have written a little over five pages so far.  Garage door man is on his way so I'll take a break now.  If he's finished by one-thirty, then I'll have time to get something to eat before the three o'clock two-hour work session.  Then I'll do another five or six pages and finish the chapter I'm on.

THE UNINVITED was wonderful as ever, except my DVD has some problems just after Ray Milland throwsthe candelabra at Mary Meredith's spirit. I thinkit's easier to order a second copy from Amazon.co.uk rather than try to return it.

I had reread the novel about 15 years ago, and I'd forgotten that both Mary and her clearly demented lesbian friend, the nurse played by Cornelia Otis Skinner, were guilty of murder andattempted murder. And the screenplay was by Dodie Smith!

Yes they are live everywhere.  Right now NBC is doing the red carpet. It's partially recorded, but airs for one hour then the globes begin

I totally forgot! :o I went out to eat after ushering for a live, filmed performance of "Aida" and just got home about 45 minutes ago.  It was an outdoor production with real horses and elephants(!) during some of the processions.  It was very good...even though you could see both Amneris and Aida's very white bra straps throughout the opera AND the ballet girls all danced in silver sneakers.  No kidding!

Well there are two categories in the Globes, drama and musical/comedy.  So, not necessarily.  I'd think Daniel Day-Lewis is still the front runner, but that's just my take.

How did a new film already get a nickname?  All the TV commercials for SILVER LININGS PLAYBOOK call the film SILVER LININGS.  If they liked that name, why didn't they just name it the shorter name?

I was in the middle of writing a chapter, having a good time, and I was just sitting here trying to figure out a character's response to something - I needed it to be colorful but also to say what I needed the other character to hear.  And I just hit on the best thing - totally came out of the blue - a real-life story that was perfect for the character to recount and which said the exact right thing in a really good way.  And that's what I love about writing - these unexpected little gifts from above.

this is what I made last year


   Ingredients:
2 1/2 lb. lean chuck, ground
1 lb. lean pork, ground
4 garlic cloves, finely chopped
1 cup finely chopped onion
8 oz. hunt's tomato sauce
1 cup water
1 can beer (12 oz.)
3 Tablespoons chili powder
2 Tablespoons instant beef bouillon (or 6 cubes)
2 Tablespoons cumin, ground
2 teaspoons paprika
2 teaspoons oregano leaves
2 teaspoons sugar
1/2 teaspoon coriander, ground
1 teaspoon unsweetened cocoa
1/2 teaspoon Louisiana hot sauce
1 teaspoon cornmeal
1 teaspoon flour
1 teaspoon warm water

Directions:
1. In a large saucepan brown 1 1/4 pounds of the ground meat (the beef and the pork), drain the fat.
2. Remove meat (the beef and the pork). Brown the rest of the ground meat, drain all but 2 tablespoons of the fat.
3. Add the garlic and onion, cook and stir until tender.
4. Add the other half of the meat and the tomato sauce, water, beer, chili powder, bouillon, cumin, paprika, oregano, sugar, coriander, cocoa, and hot sauce. Mix well.
5. Bring to a boil then reduce heat and simmer, covered , for 2 hours.
6. In a small bowl, stir together the cornmeal and flour, then add the warm water and mix well.
7. Stir into chili and cook, covered, for an additional 20 minutes.

I did  but the voters did not -- I did not get a chance to taste the winning chili as it was gobbled up so fast  and they only made a 3 quart  crockpot full

I was wondering if I should make one with steak or  one with beans -  a vegetarian chili came in 3rd place

St Antonio Chili

This Texas chili recipe is made with beef, pork, chopped onions and pureed dried chile peppers. A tasty seasoned chili recipe. Scroll down to see more chili recipes.
Ingredients:

    2 pounds lean stewing beef, cut into 1-inch cubes
    1 pound pork shoulder, cut into 1-inch cubes
    1/2 cup all purpose flour
    1/2 teaspoon salt
    1/4 teaspoon pepper
    3 tablespoons vegetable oil
    2 medium onions, chopped
    6 cloves garlic, minced
    4 cups water
    2 medium dried ancho chiles, stems and seeds removed
    5 dried red New Mexican chiles, stems and seeds removed
    1 hot jalapeno or serrano chile, seeds removed, finely chopped, or more or less to your taste
    1 1/2 teaspoons ground cumin
    2 to 3 teaspoons dried Mexican oregano

Preparation:
Cut beef and pork into 1-inch cubes. In a wide bowl or food storage bag, combine flour with salt and pepper. Toss meat cubes with the seasoned flour. In a large skillet over medium-high heat, cook the meat in the oil, stirring often. Add the onions and garlic and sauté until softened. Add the 4 cups of water; simmer for 1 hour.

Soak the dried chiles in hot water for 15 to 20 minutes. Process soaked chile peppers in a blender with just enough of the soaking water to make a pureé. Strain out excess liquid. Add the pureé to the meat mixture along with all remaining ingredients; simmer for 1 1/2 to 2 hours longer.
Serve with hot cooked pinto beans and rice on the side.

Award Winning Chili

When making this chili remember to always taste it every so often. And be careful with the black pepper! It activates the chili powder and too much will make the chili inedible due to the spicy heat (unless, of course, you like it that way). You can cook the chili recipe over the stove top in a large pot or cut the recipe in half and set it up to simmer on low in a crock pot over night. once you have made the recipe a time or two and get to now what you like and dislike about it, you can tweak it to make the chili recipe your own by adding or subtracting ingredients.
This is what you will need:
1 1/2 lbs. Steak (something that works good in a stew)
- Cut into small cubes (It is easier if you freeze before cutting into cubes)
2 lbs. Ground Beef
1 medium Onion
2 Green Chilies, diced (or 4 oz. of canned green chilies)
3 Bell Peppers
- Cut into small pieces with seeds and white webbing removed
1 stalk of celery, diced
3 medium Tomatoes, chopped (or a 28 oz. canned diced tomatoes)
2 teaspoons Cumin Powder
3 tablespoons Chili Powder
1 1/2 teaspoons Black Powder
2 teaspoons Salt
1 29 oz. can Tomato Sauce
1 16 oz. can Kidney Beans (with juices)
1 16 oz. can Pinto Beams (with juices)
In a large pot, brown all meat on high heat - DO NOT drain juices.
Combine the remaining ingredients with meat in the large pot. If the chili is too thick for you, add water to thin it a bit.
Simmer over low heat, stirring every 15 minutes for 3 - 4 hours.
Makes approximately 12 large servings.
Leftovers can be frozen for months.
Serve with shredded cheese and diced onion for toppings, as well as cornbread or french bread for dipping.

BIG E'S WORLD FAMOUS SUPERBOWL CHILI INGREDIENTS:

    2lb's stew beef, doesn't have to be prime or anything.  you'll be cooking it into shreds.
    1 whole head of garlic
    2 or 3 lbs of dry beans - pinto, kidney, pink kidneys, whatever.  pick your favorites, I'd just avoid black beans because they have a strong flavor on their own
    2 large yellow or spanish onions
    2 green bell peppers
    2 red bell peppers
    2 italian frying peppers (light green ones)
    optional - 3 carrots, 3 stalks of celery
    1 28 oz. can of plain tomato puree
    1 28 oz. can of plain whole peeled tomatoes (for both of these make sure they aren't seasoned, packed with basil etc.)
    1 small can of tomato paste
    2 or 3 dried chipotle peppers (you can probably find these in your supermarket in the section with the fresh peppers)
    1 or 2 fresh jalapeno peppers (if you like it hot)
    1 habanero pepper (if you like it really hot!)
    salt (kosher is best)
    pepper
    ground cumin (a lot!)
    cayenne pepper
    chili powder (however hot you like)
    4 or 5 whole bay leaves.
    olive oil
    1 big giant friggin' pot with a cover. (if you don't have a big pot you can use two smaller ones but it doesn't work as well, or you can cut the recipe in half.  if you don't have a cover use a clean plate, bottom side down[it matters, trust me])


This recipe doesn't take a hugely long time in terms of work but it cooks forever.  Do the steps as follows and remember that all measurements are approximate so don't worry about being exact!:

Friday night:
Set the dry beans to soaking in cold water.  4 cups of water per pound of beans.  After it settles any beans floating to the top should be tossed.  Look for any small pebbles which can get in there sometimes too, rare but it happens.  Cover with a paper towel and leave on countertop.

Saturday around noon:
Dump the beans into a colander and rinse.  leave to dry.  if you used the chili pot to soak them in rinse the pot out and dry.peel the entire head of garlic and cut the hard end of each clove.  crack each clove with the flat of your knife but you don't have to chop it.  it will fall apartput the pot on the stove and turn the heat to medium high. Pour enough olive oil to cover the bottom of the pot with about a 1/4 inch of oil.  toss in garlic and stew beef (rinse and dry beef).  season with a good amount of salt and pepper but don't go crazy.  you can always add more later.  stir occasionally until meat is browned on all sides.  cover pot and reduce heat to medium low (if 1-10 scale use 3).  let it stew for about an hour.  there should be a lot of good juice in the pot. While that's going clean and slice the bell peppers (get rid of as much white pith as you can) and the frying peppers removing all seeds.  Leave it thick since they will fall apart in cooking too quickly otherwise.  Slice the onions removing and discarding the inner core. If you are using carrots and celery wash and slice those as well.

Saturday around 1-1:30pm:
Once the beef is done throw all the Veggies into the pot and stir.  Cover and let cook for about 15 minutes. Stir the pot and toss in as much of the beans as you can.  You want it to be fairly full but not to the top - yet.  Add the tomato puree and paste and stir.  Add the whole tomatoes and their juice.  With the edge of a wooden spoon "pop" each tomato.  You don't want to cut them up but if you leave them whole they won't break down which is what you want eventually.  Stir that in.

Time for spices!  Add a good handful (yes, use your hand!) of ground cumin.  add about a tablespoon of cayenne and a tablespoon of chili powder.  salt and pepper to taste.  Add the bay leaves and the whole chipotle peppers and stir it up!  add any remaining beans if they'll fit.  DO NOT ADD THE JALAPENO OR HABANERO YET!.

Cover and let simmer for about a half hour on low.  It should be very slowly bubbling.  If it's really popping turn the heat down.  If it's not even steaming turn the heat up a little. Stir it and taste.  Adjust spice to your taste.

Saturday for the rest of the day:
Every 45-60 minutes or so give it a stir.  If it's too liquid leave the lid off for a while.  If it's dry add a little water.  I like my chili thick but others like it a little more soupy.

Saturday around 6pm:
The stew beef should start falling apart.  stir it and start mashing the cubes a bit to help the process.  every time you stir you should try to mash a little more of the beef.

Saturday around 10pm:
Turn off the heat and let the whole thing cool down.   You need to let it sit for about 2-3 hours before you put it in the fridge or you will screw up your fridge so that's around 1am.  If you need to go to bed earlier then take it off the heat earlier

Sunday around 1pm:
Put back on the stove on medium low.  Slice up jalapeno and/or habenero pepper and toss in and stir.  Remove the bay leaves as you can (always count how many you put in and make sure you get them back out.  They can do a number on your throat if you accidentally swallow one).  Once it's back up to bubbling turn heat to low just to keep it warm.  You're ready to go!

Serve with shredded cheese, chopped onion, jarred jalapeno slices, black olives etc.  Whatever you like!  Enjoy!

I almost forgot - after handling hot peppers, wash hands immediately!

Well, I enjoyed Tina Fey and Amy Poehler as hosts of the Golden Globes.  I wasn't paying too much attention to the acceptance speeches, though...maybe I will for the Oscars.
