i have two:

1) eclairs but it has to have custard and not cream
2) I know it as mille-feuille* but in the us of a it is call napoleon. once again it has to have custard and not cream

*literally translates to 1,000 sheets but the correct one (i believe) is 1,000 flakes

Yes.

Give me anything else, from galaktoboureco to donuts, and I'm happy.

I make this easy tart with plenty of butter, almond extract and jam, and I'm a sucker for it as much as everyone else who tries it.

Tuesday morning greetings!  Richard and I are going to try to finish painting our bedroom today.  All that's left is about 2/3 of the north wall, which is mostly window.  I'd like to get it all done today so that we can take down the old curtains this morning and put up the new ones this evening.

John G  is this the recipe you use?

Greek Galaktoboureko–Cream Milk Pie

“Galaktoboureko is a beloved traditional Greek dessert, although not as well-known as baklava among non-Greeks,” “It’s essentially a cream custard, wrapped in phyllo and infused with an orange-flavored syrup.”

CHEF’S TIPS:

• Sprinkle cinnamon on top before serving.
• May use any pastry sheet in place of the phyllo dough.
• Butter the pan before adding phyllo dough so it doesn’t stick.
• Keep the phyllo sheets covered with a damp towel while you’re working, so they don’t get dried out.

INGREDIENTS

For the pie:
4 C milk
1/2 C sugar
3/4 C farina or fine semolina
1/4 C butter
1 t vanilla
2 t orange zest
5 eggs, beaten
1 1/4 package of Filo Dough
3/4 C butter, melted

For the syrup:
5 C sugar
5 C water
2 cinnamon sticks
1 orange, cut in half

DIRECTIONS

1. Preheat the oven to 350°.

2. In a large pot, heat the milk and sugar. When warm, add farina slowly, stirring constantly with a wooden spoon until it thickens and is smooth.

3. Add ¼ C butter into mixture with wooden spoon and blend it. Turn off the heat, then stir in vanilla and orange zest.

4. Cool the mixture down and add the beaten eggs, continuously blending all ingredients.

5. Butter a 13x9x2 -inch baking dish. Place 6 sheets of phyllo dough in the pan, one at a time, brushing each generously with melted butter.

6. Pour the custard mixture in the pan, then top with 3 phyllo sheets, again brushing each with butter.

7. Use a sharp knife, score (cut till just penetrated) the top 3 layers of phyllo sheets to mark the portions. This makes it easier to cut after cooking, and allows the syrup to penetrate better.

8. Put the baking pan on a rack in the middle of the oven and bake for for 45-60 minutes, until it becomes golden brown.

9. While the pie is baking, make the syrup. Add all syrup ingredients to a large pot, bring to a boil, and cook for 15 minutes. Remove from the heat and strain. Discard solids. Let syrup cool to room temperature.

10. Remove pie from the oven. Immediately ladle the cooled syrup over the pan. It will saturate the phyllo and custard. Allow to cool completely, for at least 1 hour, before serving. Serve cold or at room temperature.

Good morning, all! This damned nerve in my left heel is working my last nerve. I went to bed at 10:00, and the nerve started its usual rontine of regular shocks;  around midnight, I took one of the muscle relaxers I'd been taking last fall; the pains cntinued and the lqs time I looked at the clock it was 3:30. I'm guessing I had no more than 6 hours worth of sleep,

So, the forecast says it's a day of heavy rain. There's no rain at the mment, but it seems  bit chilly outside. If  I'd risen earlier than 9:30, I might have gone down to Toyland.  Looks like it will be Thursday now.

Anything, basically, with lemon custard in it.  Just...anything.

Chocolate eclairs.

Cheese rolls that have been baked with the cheese inside them and on them.  Crunchy exterior preferable.

Baklava.

Pie.  Creamy pie preferred.  Pecan pie.  Coconut pie.  Chocolate pie.  Lemon pie.

Does cobbler count as a pastry?

DR TCB - Debbie and Carlton sang "That's How I Need You" at the piano in TWO WEEKS WITH LOVE.....the only other movie they were in together is THREE LITTLE WORDS, and I'm not sure Carlton sang with her in that movie....she played Helen Kane.

I think, DR TCB, that you are remembering the scene from "Three Little Words".  A piano is being delivered on a city street and someone starts playing a bar or two of something.  A young girl walking by, wearing a tam o'shanter (I wrote this because I've always wanted to write "tam o'shanter"), stops, listens and then says, "Boop Boop di Doop" (or WTHIW*) in a high squeaky voice.  That was Debbie Reynolds as Helen Kane.  The voice, however, was Helen Kane's.  Debbie later lip-synched the entire "I Want to be Loved By You" song as sung by Kane with the trademarked "Boop Boop di Doop" (or WTHIW**) at the end.

On Sunday I'd just started cleaning out the refrigerator when the garbage disposal up and died. The "up" part was how it sprayed water all over. Now the kitchen sink is clogged. The plumber is due on thursday. I know that some of you have building managers who try to keep the tenants happy, but here they take a different approach: we wait...and wait...until the el cheapo moonlighter plumber can fit us in. I can understand when there's no urgency, but I think it's unreasonable when there's a clogged drain. I was told that I have to accommodate HIS schedule. And he doesn't usually know more than a day ahead what HIS schedule will be. I am trying to not get upset over it. After all, Larry's bathroom ceiling set the new record for absurdly slow repairs.

DR Jeanne, that is horrible. My complex has 101 apartments on 7 floors, and I have never waited more than a day for any kind of repair or fix. Usually it is done the day I put in the request.

However, I have been in your situation. I lived in a courtyard of 8 cottages back in the mid 1990s. The college girl in the cottage next door to me complained about the ants getting into her cottage. Next thing you know, she was evicted. In Oregon you can (or could) evict without a reason and I was afraid to ask for anything from those landlords!

thanks, Jane, but it wasn't the laser that made me tired. I just hadn't gotten enough sleep. The laser sometimes GIVES me energy, as it reduces the pain and heals the troubled area. I definitely have less pain than I did, even on bad days.

Thank you, ChasSmith, for the reminder that you could get a discount at Barnes and Noble on the Criterion movies in addition to the half-off sale. Got me "The Wages of Fear," which I've wanted for a long time, and "Chasing Amy," which was super cheap even before the discount.

Well it was a great scene.  Too bad it never happened.

*  Internet lingo for "Whatever the Heck it Was"
** Ditto

Thank you, Ron.  And later in the film, Debbie sings "I Want to be Loved By You" to Carlton Carpenter.  Thank you!

I am home and have been for about an hour.  Today has been a day!  The field trip was interesting and enjoyable.  We left Tumwater at about 8:30 and our meeting wasn't until 10:00, but we got there at about 9:15...that's too early!  So, we stopped off at nearby Starbucks and I had a sausage, egg and cheese english muffin.  It was very hot and quite tasty.  I also got a mocha frappuccino, which was delish.

When we got to the Pierce County Library Processing and Administrative Center, they had snacks for us!  We got a tour of their administrative center, then we met with several of their staff, then we broke out and met with our individual counterparts.  I spoke with another acquisitions clerk and she was very nice.  They have a different computer system, but their ordering process is very similar.  I really didn't learn too much that I didn't already know, but it was a fun day.  We got back to our work by 1:30 or so.  I worked until I left at 7:00.

but i'm glad that tod was about pastries.

i have two:

1) eclairs but it has to have custard and not cream
2) I know it as mille-feuille* but in the us of a it is call napoleon. once again it has to have custard and not cream

*literally translates to 1,000 sheets but the correct one (i believe) is 1,000 flakes

I agree with DR Mike about Napoleons and  Eclairs  custard only   I also like me a nice cheese danish, especially with sliced almonds on it

I love eclairs with custard, too!  My favorite donut is a Bismark.  It's almost like a Boston Cream Pie in your hand.  Yummers!  I also love apple fritters and cinnamon rolls, especially with extra filling.

I think I would prefer it to baklava.

The Galaktoboureko sounds delish, but I certainly wouldn't pass up the baklava.

George, I meant to thank you for your suggestion the other night for my side mirror. The part that's broken has to do with adjusting the mirror, so actually I don't want it to be too permanent. I'll play with some duct tape. But not today.

Makes sense...if you use that epoxy, NOTHING is going to move.
