DR JohnG, what's this animation kick you are on?  I remember seeing "The Legend of Sleepy Hollow on Disneyland as a kid, and I had nightmares for years. I've always liked the Disney version of The Wind In The Willows.  Like most Disney animation, it drops whatever subtle beauties the book has but Mr Toad in both the book and this anmated short remains one of my all-time favorite characters.

Mt favorite Disney score and cartoon is Alice In Wonderland, another favorite book the Disney machine drastically revisited, but so wickedly funny and perverse that no film's done it better.

TOD - my mom served kale as a side dish when I was a kid.  I can't remember if it was hot or cold, but I do remember that it was garnished with sliced hard-boiled eggs and sprinkled with vinegar.  And we all ate it...

Elmore, the library recently got in Sleepy Hollow, which is part of Mr. Toad. I had the album when I was a kid, and yes, it creeped me out, but in a good way. That's why I wanted to see it again.

So, when I went to pick it up, I also saw Dumbo and grabbed that. It made for a fun double feature.

I agree with you on Toad. I loved the book, and I love the treatment as a separate entity entirely.

I grew up with kale coming in from the backyard garden, so I find its trendiness rather silly.

Quinoa is a word I hate almost as much as the flavor, and I hate even worse the chefs who, for the last 16 years, have been spouting how it's the next big thing. Get over it, chefs. We don't want to eat it. Not when we can have amaranth instead.  :D

As for sous vide, puh-lease. I like real cooking using real techniques that people can use at home. I don't go out to eat in order to have a chemical experience. I don't eat many processed foods at home, so I don't want to pay some chef in order to turn fresh food into processed food for me.

Most food trends are overrated bits of ridiculousness. Just give me some goji berries and I'm happy.

It is a discontinued model that had a retail price of $499.99 although it is on sale on some sites for $299.99.   But it is out of stock everywhere.  It is 44" high, the top brace is cracked, but it stays together and looks very nice.

I bought it to put on our ART DECO set, but I am not taking to the theatre until I see if there is room on the set to put it.  They haven't used anything I thought was nice yet - and they don't want to be reminded that they put a French provincial sofa in an ART DECO setting.....

oh....I paid $9.99 for it.

Kale (warning: this one's quite graphic. Skip if you have a weak constitution): I took a class at John Jay with former chief medical examiner Michael Baden. He devoted one class to the (then 2-year old) OJ Simpson case, including pictures of the crime scene and Nicole Brown Simpson's autopsy. Her stomach contents included some fancy greens, "probably kale or something similar"

Quinoa: There's been a long-standing debate in the Orthodox Jewish community as to whether or not quinoa is kosher for Passover. The main issue is whether a centuries-old European rabbinic prohibition on certain "grain-like" products (mostly legumes) would apply to new-world products as well. It seems like the debate has leaned over to the lenient side, although I'm pretty much in agreement with John on the general merits of the stuff to begin with.

Sous Vide: I first heard about this one when the Times ran an article on the practice, particularly on the challenges food safety inspectors had in regulating it. Food cooked sous vide is cooked through at lower temperatures than those recommended by safety guidelines, and there was significant question as to whether or not the practice was sufficiently sanitary. I never cared enough to follow up on that.

Quinoa should not be pronounced "keen-WA".  It should be pronounced the way it looks:  Kwin-oh-wa!

And Acai....oh, my.  First, it's not an English word and has no association with an English pronunciation.  There should BE an English word for it.  I do not find "ah-sa-'EE" to roll trippingly off my tongue.

I had never heard of quinoa (and couldn't pronounce it) until just two and a half years ago. My dog came down with a rare disease and I had to go to a special web site to look for recipes I could cook for her. This disease is mostly controlled by an ultra low-fat diet (as opposed to medication). The web site suggested several very weird diets - one of them being bananas and
squid - I'm not kidding! And it also recommended things like quinoa and crab meat, which was a little more do-able, but I first had to learn what quinoa was (and how to pronounce it). Ultimately, I've been feeding her potatoes and ground turkey, which is more do-able still, and she's thriving very nicely.

I learned about kale and endive in college when I worked at the dormitory cafeteria. We used it as decoration around the salad bar. No one actually
thought to eat that crap.

I have no idea what sous vide is (or how to pronounce it).

Being from Northern California, as opposed to the part of California that's closer to Mexico, I had never heard of salsa until I went to college (in Southern California). Now I wonder how I could have possibly lived to be 18 years old without knowing what salsa is.

I think I first heard of quinoa when my niece became vegan a few years ago.  I remember coming across this article from England about the people who actually grow the stuff for the rest of the world, but because it's exported, it's become much too expensive for them locally, when it used to be a staple for them:

I'd always heard of kale, but never had any until in a salad a few years ago.  Liked it fine, then heard that a lot of people think it's pretty worthless.

As for quinoa, I never really knew what it was -- or how to pronounce it -- until I saw the David Lynch short of him cooking some.  I'm not sure whether I've had any myself.  I think I have, but could take it or leave it.  Probably leave it.

Me, neither.  However, I do know about blanching foods prior to freezing them.  They're not cooked, per se....only partially cooked.  But "sous vide" is specific to vacuum cooking inside a plastic bag.  So....

So what other ingredients have come into the public consciousness in the last five years - I know there are several, I see them whenever I'm in one of "those" restaurants.  And not only ingredients but stuff like "gluten" - a word no one used five years ago save for people who had celiac.

Craig cooks with kale and some of the things he made were very good.  I only liked when he cooked it, otherwise I don't care for it and it also upsets my stomach.

To be fair to these foods, most foods upset my stomach.  I just decide which are worth the pain and which aren't. ;D

I think the next big thing will be new words for types of dishes, like Mexican antojitos (snack foods) being called tlayudas instead of tostadas. The recipes themselves will remain largely the same.

I also think we'll see more street food snacks from India and Pakistan, Asia and more as recently studies have suggested greater health benefits from eating spicy food.

So, after doing errands at the post office and the library, I got to Nita's right at 1pm as we had scheduled.  Set up my laptop on her kitchen table and tried to figure out how to use the spreadsheet that Richard had helped me with last year.  By 1:30 I was on my way back home because I decided I needed a tutorial from Richard and we needed some papers that are here.  We're going to try again tomorrow afternoon and she's coming here in case we need Richard's technical assistance again.

You're a special kind of person, aren't you!

Make sure you use a good heavy pot with a copper bottom.  Take it over to the sink and fill it...with fresh water.  Lots of nice, fresh water.   Fresh water.   Ensure you add sea salt in exactly - and not-to-be-exceeded - the unseen quantity.

And don't forget a colorful story about someone shooting Coca Cola through her nose until she got used to the carbonation.

(I couldn't go any further lest I shoot myself).

I went down to my mail box place today only to discover that the business had closed as of Saturday.

All mail and packages have been sent back to the senders.

And the s.o.b. owner gave none of his customers any notice that he was closing.

Immediately, I went to a UPS Store and got a new mail box/shipping address.  I also went to the post office to put in a change of address, which will take about 2 weeks to go into effect.

I have been making phone calls and sending out e-mails all afternoon to people who send me packages or snail mail.  I'm sure I've missed some folks, so if you need to send me something the old fashioned way, please contact me privately and I will give you my address.

Bummer, right?

I looked at the box and thought how sick I would feel if I ate all those donuts, and then inside was celery & dip-lol

Since I'm now a Costco member, I've been buying "2 minute grains" in the refrigerated section.  The ingredients are Red Spring Wheat Berries, QUINOA, Farro, Barley, tomatoes, onions and peppers.  It's delicious!

I first heard of sous vide from FJL's Skip when he was experimenting with it.. Last year when we went to Canada our niece's husband made us a delicious steak dinner with his sous vide contraption.  I must say the steak was delicious and tender and perfectly medium rare all the way through with no overlooked or undercooked spots

Tomorrow is the 40th anniversary of one of my staff.  She's been working for the library for 40 years!  I sent around a card and we're having a little get-together tomorrow afternoon. :)
