The brilliant orchestrations are by Michael Leonard (Mickey to his friends) - composer of the musical The Yearling. I am up and there is a dire weather forecast. For a boy from Minnesota, a little snow never stopped me before but now I'm partnered with a boy from Long Island and his dislike of cold weather and snow is legendary (at least to me) so I must factor that into the equation. DR JANE:Unfortunately I’ve never heard of Wild Bamboo towel but it sounds good. I use organic cotton towels and really like them. These are very soft and absorbent, and also last long . Wondering if you found their (Ikeuchi Towel.Co) site… they have a English site which has not much information but will help you decide, I think.

The cheesecake (Part I - the cream cheese, eggs, sugar) is now baking in the oven. Then comes Part II (sour cream and more sugar). It's a nice non-fattening dessert.
The most difficult part of this recipe is the waiting. The cake has to chill for quite a few hours.

I wish Jerry Herman had written HELLO DOLLY in the 1950s so we could have had THAT cast in the film musical version. I don't think Paul Ford could sing, but all of the others are perfectly cast for the musical version and would have made a glorious one! I cannot wait to get my hands on THE MATCHMAKER. It's really a wonderful production of that play.

Sorry to be E&T last night, but I was at my friend's house doing the last few hours of calibrations for the new home theater we set up this week.

My Bollywood movie for the weekend is NAGINA (1951). It is a creepy horror film about a young man searching for his missing father. He comes upon a castle inhabited by a madman, his lovely daughter, a brute-like assistant, and a man kept captive in the basement.
The movie is very good, however the subtitles are out of whack...sometimes they are there and sometimes they are not...it is very annoying as I don't know what the characters are saying half the time because they somehow forgot to subtitle much of the film.
And from the looks of the DVD cover you would never guess this was a horror film!

Speaking of hair: DS and I were watching a Night Gallery episode last night starring Miss Patty Duke and the recently departed Virginia Mayo. There is a moment with a gigantic closeup of Patty, and DS and I reacted with horror simultaneously upon seeing she had a very noticeable and dark mustache! "They should have bleached that," DS said, almost as if she had had personal experience in such matters. ;)

DR HIsaka, I also wanted to mention how beautiful those roses are. I have never had much luck growing roses. When I moved into my house there were many roses, but I eventually dug them out and gave them to my neighbors because I just couldn't take care of them very well and they looked so sad (the roses, not my neighbors).
Fortunately neighbors Clara and Mike did wonders with them and they are looking very healthy (the roses, not the neighbors).

For 3 Stooges fans, I see that SNOW WHITE AND THE 3 STOOGES is being released on DVD in a few months. I know it is not one of their best movies but I have always enjoyed it...it is fun to see Carol Weiss skate and looking at hunky Edson Stroll as the prince is no chore, believe me!
And when is L'IL ABNER being released, does anyone know? I wonder if Leslie Parrish will buy herself a copy?

Note to DR Jane...sorry I didn't get to the bagel shop this morning, we had Part II of the washer fiasco. It turned out the outside pipe WAS frozen, DH ended up disconnecting it, pouring hot water over the small exit pipe to clear it and then pulling out his pick, he dug a trench in the frozen tundra that is our back lawn (he is so handy, I love my handy Mann!!) so that we can get the rest of the laundry done
Next week egg and rye bagels unlress we freeze to death in this supposed "Storm of the Century"

OHH!!!! And my niece, Alexandra, came over here this morning with her brother and her father (my brother, Mike), and she actually didn't run screaming from me!!! In fact, she fed/shared one of her Goldfish crackers to/with me, and she even asked me to find somemore "Gold-pishhh" when she had emptied the bag. And we even played horsey too!

I am now going to relax on the couch and watch my new DVDr (via Ebay) of Roger Corman's ROCK ALL NIGHT starring Abby Dalton and Russell Johnson, then take a nap.
I planned on traveling up to Portland tonight to see the double feature of two 1950s rock and roll features ROCK AROUND THE CLOCK and DON'T KNOCK THE ROCK, in prints fully restored by Columbia and presented by the Portland Art Museum...but I have had a sore throat for the last couple of days and don't know if I will feel up to going...but doggone it I would love to see those two movies. Maybe if I rest I will feel more energetic.
PS: JRand54, I wish you lived close by as you are the only person I know that would actually go to see those two movies with me! All of my buddies here suddenly got busy when I asked if they wanted to go! LOL!

This morning, I went for a walk, and this is what I saw: A driveway with "Our dogs' brains are bigger than corn" written in sidewalk chalk. Really makes you think, doesn't it?
And then some guy I didn't know in a car stuck his head out the window and asked me how my term papers turned out and if I got good grades on them. I guess I complained to the whole world about those term papers.

Matt H I was pleasantly pleased with the new cast members to MONK-still wish they would eliminate an old member. The opening scenes with her were very good-best part of the entire show. I just wish the scripts would improve.

Ginny two years ago I had surgery and came home in the afternoon. Keith practically begged them to keep me overnight but the response was only if I had complications. I happily returned home with the IV pain meds doing what they do so well. After a few hours they wore off. As far as I now know all pain meds I swallow make me very ill.

Vixmom I’m relieved you didn’t attempt to send me bagels today. I can’t believe you sucked the water out of the washing machine. It wouldn’t go out the pipes once they were cleared? Can you now leave water dripping through those pipes so they won’t freeze again? Stay warm.

Me too, Jane, especially the Vicodan the oral surgeon gave me after I had my last wisdom tooth removed at the "ripe old age" of 52! I landed in the ER (on Mother's Day, yet) with severe GI complications.

DR Hisaka (and others, too) - Today's mail brought a package from Japan. My cousin Dan has lived there for 20 years - lives in Mie Prefecture and teaches English at a university. He sent us a New Year greeting and an album of photographs taken when we were all together in September at his brother's house in Georgia, USA. :D

The saleswoman told me that kids that age like silver, not gold, and I wound up spending less than I would have at The Bay. Plus, they delivered. Plus, my ratings went through the roof.

CHEESE CAKE
Bake in a spring form pan 3 1/4 days to 3 1/2 days prior to serving
Crust:
42 crushed honey graham crackers mixed with
1/4 pound or more melted butter
Until crust sticks to the sides of the pan
Filling:
Cream 18 oz cream cheese with dash salt
Mix in 2 eggs until creamy
Gradually,
Add 1 1/4 or more cup sugar
Fold in 1 large carton sour cream mixed with 2 teaspoons vanilla
Bake at 350 degrees for 10 minutes
Topping:
1 large carton sour cream mixed with 2 teaspoons Vanilla
As quickly as possible, starting from the rim of the cake
with the back of a spoon or a spatula gently cover the cake
Bake another 35 minutes
possibly longer, but don’t let the cake get more than golden brown or if it begins to crack.
You can purchase a smaller spring form pan and cut the recipe in half.

I think Traylor Howard is going to work out just fine as Monk's new assistant. I quite enjoyed the episode. There was a mystery and some laughs which is all I ask of MONK.

I think the transfer of PRIVATES ON PARADE is very good. No, maybe not quite as sharp as some recent transfers (and it's an MGM job which is sometimes a real problem). But MGM did do an anamorphic transfer, and the color is well saturated and looks very good. Mono sound, of course.
I saw this in a revival theater with a fairly dim and damaged print, so it was kind of a shock seeing it look as good as it does on this DVD.

I'm back from Sierra Madre - got my magazines, spoke to Mr. Harryhausen for a bit, and had him sign the Harryhausen coffee table book and the new DVD of his early work. There was this "person" named Arnold who, apparently, has overtaken Mr. Harryhausen's life and become his right-hand man so to speak. If you want Mr. Harryhausen to do anything you have to now go through this twerp named Arnold. You know how you get a bad vibe or xylophone from some people and you get it instantly? That was the case here. I hated him on sight - loud, obnoxious, overbearing, and totally controlling of Mr. Harryhausen. I spoke to someone about this and what I felt was confirmed - apparently no one likes this pushy little pedant. Also, I found out that this pushy little pedant yelled at my friend Richard and Margaret's daughter Sophie, when Mr. Harryhausen was at the Renaissance Hotel and Sophie had made all the arrangements for a lovely stay.

I have yet to read the posts for today; I never finished them yesterday.
In answer to a question a week or so ago about revivals, I'd like to see a revival of "High Spirits." There are a number of good people who could do it-- even Blythe Danner AND her hair could do a lovely Elvira. Ah, but for Madame Arcati, we don't have Margaret Rutherfords and Bea Lillies anymore. Just like no more Paul Fords.
I love both the rilm and the film of "The Matchmaker." I think it's a perfet cast. Ms.Booth does a perfect job as Dolly. I have always admired Messrs. Stewart and Herman for sticking so closely to the original play and for letting the songs flow so easily from the play. They're not forced at all-- very similar to how easily (most of) the songs flow in "My Fair Lady."
Besides the obvious "Fish Heads," my favorite song With both love and fish in the title would be "I Love you a Bushel and a Fish."

One thing that surprised me was that they passed over a bunch of good ones. To me if you're good, you should at least make it to Hollywood.

Im not surprised the ratings are lower, I'm not surprised it's still on, I'm not surprised people watch to see others fail and be humiliated (which is the object of this slice-of-life exercise), I'm not surprised it's great to think that anyone could sing better than some of these, and that you (or I, in this case) can sing better than most of them.
What surprises me and fills me with rage is that these %$##$^^&* PARENTS have encouraged the kids far past their capacity to perform-that they did not have the human decency to get them teachers and adequate feed-back before they pushed them onstage on a pink cloud of delusion to Fail Miserably, to Humiliate Themselves Utterly on f***ing national t.v. What on earth possesses these folk who haven't the guts to do the hard stuff of parenting a child with aspirations in the arts? And if they think their child is talented, let's see the names on the CDs they buy. Is it Dame Edna? Tiny Tim? That guy from first season who writhed to the latin beat of "She Bangs"?
EEEE, I am vexed.

I just tried a new Lean Cuisine entree for lunch, and it was filled with seeping funny and was so awful it made me want to vomit on the ground. This entree gave a whole new meaning to seeping funny.

I got a good as new for the price of a used. He knew all of the tricks of the trade and got me a GREAT price and low payments!
Your not going to believe it but it turns out that even there, on the other side of town, where I bought Bonnie, they knew about the A-Team van. One lady lives out my way and she recognized it when I pulled in. She couldn’t believe it was short old me that hopped out of it. LOL! After the sale they even offered to take Bonnie back and have her repainted with the stripe down her.
I’m sorry to hear that DR Ann is ill from the meds. I’m sending her get better vibes!

Good Afternoon!
Back from the matinee... And the evening show was cancelled! :) -Apparently, they had a lot of people calling in to cancel their tickets. Additionally, the Metro system and busses started having delays, so...
Of course, the snow stopped sometime during the matinee, but there's supposed to be another small wave of flurries coming through. However, the big problems tonight - at least in this area - will be the cold and high winds.
Thanks for all the Safe Travel Vibes. I took my time driving in and out of DC. Of course, there were a bunch of idiots who were trying their best to drive up to speed, including one cretin who was following about two feet behind me for a few miles on 66 without his lights on. And he was in a smaller car than mine! "Idgit!"
Oh, but I did get some satisfaction - I guess, schaudenfreude - whenever I would see some big pick-up truck or SUV who had spun off to the side of the road. -Thankfully, I did not see any major accidents, and from the traffic reports on the radio it appears that most people did behave on and off the roads today.
Now, what to do on a Saturday night?

While commuting the other day, I heard an ad for a car dealership on the radio. I can't exactly remember which dealership or brand, but instead of saying "Sport Utility Vehicle" for SUV, the announced was saying, "Safety Utility Vehicle".

...And, yes, I had a wonderful time playing with my niece this morning. She still doesn't run to me when she comes through the door, but, like I said, she doesn't run screaming from me anymore. She just shakes her head everytime I ask her if I can hold her. However, the old "give me a kiss" trick still works. ;) And she's also started giving hugs too.
But it was a very pleasant surprise when she fed me one of her Goldfish crackers. She's usually very covetous about her food. And then when she asked her "Uncle Do-Do" - we'll work on "Jojo" - for more "Gold-pishhh"..... Aw...
*Oh, and my Mom has already started getting Alyssa to "help" her out too. My mom had finished her cup of coffee in the living room, and I was washing dishes in the kitchen. My Mom calls Alyssa over to her, "Can you bring this to Uncle Jojo in the kitchen?", and hands her her empty coffe cup. And then she delivered it to me in the kitchen. The joys of grandchildren!

RE: Cheesecake recipes
The Philadelphia Cream Cheese recipe is a classic, and very easy to futz with and dress up with fruit, chocolate, cookies, etc.
Until Jane had sent me her cheesecake recipe, I had never seen a recipe that called for a cheesecake to set up for three days. Usually, it's just overnight, or a couple of hours until set up. From what I can tell, Jane's recipe would require a few days to set up since the ratio of eggs to cream cheese is not one-to-one (one egg to one brick of cream cheese). Additionally, with that much sour cream on top...
On the "old board" I posted a recipe for "Paul's Cheesecake" from Nick Malgieri's "Perfect Cakes" book. Very easy. Just mix everything up, put it in the oven for a few minutes, then turn the oven off, then leave it in the oven for two hours to finish cooking in the residual heat.
It was also in "Pefect Cakes" where I learned how to turn a cheesecake out of it's pan. Yes, it's a little scary, but it does work, and, best of all, you don't have to worry about "losing" the bottom of your springform pan. Consequently, I've baked a few cheesecakes in my 9-inch cake pans which eases the fear of water leaking into the pan from the water bath.
*I have to say, one of my favorite most decadent treats is frozen cheesecake. And now that you can get frozen cheesecake on a stick dipped in chocolate and nuts (or not nuts) at various places... YUM!

Oh... And weather permitting, if I make it back to Richmond tomorrow night, I plan on making Jane's Cheesecake Recipe on Monday. We're also off on Thursday next week, so I can go back and pick it up later in the week. And then present it to the cast and crew on Thursday night.
-And Philly Cream Cheese was on sale a few weeks ago at Ukrop's - $0.75 a package! So I stocked up. Thankfully, it has a relatively long shelf life. Just like sour cream does.

I was pretty embarrassed that Phil (the guy from the Credit Union) had to show me how many of the things work. Like the Cruise Control. I’ve never drove anything that had that feature or the intermittent wipers. Mine have always had 3 settings. Off, slow and fast! The cruise control is pretty neat but I don’t know that I will ever have a use for it. Unless I take a road trip.

Tiffany's was fun. It was an exchange situation. DD got me a bracelet for Hanukah that did not fit. The one they sent in exhange also did not fit. When DD complained to Customer Service (the sizes were not what she had ordered), they sent her a complimentary bottle of Tiffany Perfume, worth $70.00!
I've posted before that DD is excellent at complaining so that Customer Service at any decent establishment feels compelled to send her a gift or give her a free night at a hotel, etc..
So we returned the bracelet AND the perfume -- and for the added value I chose a much nicer bracelet than the original one. Anyone who is interested in that type of thing can probably find it on the Tiffany site. It's the new sterling silver starfish bracelet. They only had one left - with my name on it, apparently.
On the way out, I felt rather guilty at being able to splurge at Tiffany's (so to speak) while people were outside begging on the street. So I gave money to two homeless old black guys in wheelchairs who were a few feet from the door.
One of them said, "Hey, lady, could you adopt me?"
Me: I already have one.
Old Homeless Guy: (pointing to DD) I was talking to her!
Me: No, I don't want to be a grandma yet.
Old Homeless Guy: Well, if you change your mind, I'll give you my office number and my home number.

...And speaking of "American Idol", local afternoon "shock jocks" - who really arent' that shocking - Don & Mike were able to get a hold of Mary Roach - the scary girl in red and white from the first episode. She's a local girl from Manassas, VA. They ended up getting a pretty good interview out of her.
Yes, she may not be the most well-adjusted person, but, heck, she's only 18. They asked her how she felt about the whole experience, and she was very forthright with her opinions. She explained that the whole "voices in her head" line was referring to the impersonations she does. -Then she demonstrated her Britney Spears.... eh...
Then they asked her about her going-off on the judges at the end. She admitted that she never really thought of herself a singer - or even a great singer - until a few weeks prior to the audition when a couple of friends started complimenting her, and then... Part of her "rage" was from the realization that the screeners had set her up. She said she was amazed she got past the two sets/levels of pre-screeners, especially when she heard some of the good people who got turned away. And then to have Randy, Mark, Paula and Simon all of the sudden be so brutally honest... And as she left the room, she just started to realize how the pre-screeners had been feeding her own delusions of grandeur.
Again, not the most well-adjusted individual, but it was fun hearing her side of the story.
"Reality TV"? -Well, we've had this discussion before, so... But it was interesting hearing her side of story - and not the one that's one Fox's AI site.
Oh - And she was calling in from LA where she had just done a taping of whichever entertainment news show that "hottie" Mark McGrath is now hosting - "Extra" ?? They gave her a complete makeover and some new clothes as well as the free trip out to LA.

As for frozen cheesecakes... The next time you're at the grocery store, just go over to the freezer case and pull out a box of Sara Lee's Cheesecake. You can let it defrost if you like according to the box instructions, but... They also make those cheesecake bon-bons and bars now. Again, you can serve them from the fridge or from the freezer. And I believe a few company now sell "cheesecake singles", individual slices so you don't have to defrost - or not defrost - a whole cheesecake.
Of course, you could always but a fresh cheesecake and freeze it at home if you like. Cheesecakes freeze very well.
As for light and fluffy versus thick and creamy... I like them both ways. There are some Kosher cheesecakes out there which are made without eggs - just cream and cream cheese and some sort of stablizer (gelatin? but I don't think that would still make them kosher). A place I used to work at would serve those for dessert.
As for cheese pies, Italians and Greeks - and I'm sure other cultures - do make cheese pies out of ricotta and other "soft" cheeses. My favorite Greek place in Richmond makes an incredible Key Lime Cheese Pie. I don't even think it's baked. And the Italian Ricotta pies are very nice too - with citron and golden raisins usually.
Then there's marscapone... and tiramisu...

I believe our very own BK mentioned that he had lunch at The Cheesecake Factory just the other day. In fact, I believe it was just yesterday.. and mentioned in today's notes.
I like TCF. Very good "corporate" food. And they seem to cast quite a spell wherever they set up shop since there always seems to be a wait to get a table. And some of their fans are truly fanatical, willing to wait and hour or two(!) for a table.
Before you go, just remember the menu is full of ads and full of food choices. They serve a little bit of everything - American, Italian, Japanese, Mexican, Chinese, etc. - and the portions are humongous. There's now way any regular person could order an appetizer, entree and dessert and clean their plates. I suggest checking out their website beforehand if you don't want to get overwhelmed when you first sit down. This way you can whittle down your menu choices.
The cheesecakes are very good too. Lots of choices. A lot of people think they serve big slices of cheesecake. I've never thought their slices were that generous, but I guess after a full meal, a slice of cheesecake of any size would seem big. And maybe the average price of $6.00 per slice also makes it seem bigger than it is. -That's your cue, DR TCB!

I'm sure our New York City denizens can contribute some other choices, but Junior's is always good for a hearty slice or full pie. The main location is in Brooklyn, but they now have some counters set-up in the city - the one in Grand Central comes to mind. -Oh, and Junior's uses a cake crust for most of their cheesecakes instead of a graham cracker crumb one. -And a brownie one for their chocolate varieties!
Lindy's is supposedly known for the cheesecakes, but, unfortunately, the Times Square location has become quite the tourist trap with tremendously inflated prices. There are also some small bakeries up and down the island that make some very good cheesecakes.

I had to chuckle over your embarrassment needing instructions on your new car. You might have needed them anyway from one car to another. When I rent a car I have learned to check how everything works before I pull, just in case I need a few instructions. On my first trip to L.A. when my father was in the hospital I couldn’t get the lights to turn on. Fortunately that visit was in the summer & I only drove once in the dark. It turned out they didn’t work properly but I kept wondering what I was doing wrong.

Danise -- Lindy's still has great cheesecake, but as Jose pointed out, you need to take out a bank loan to buy one of the smallest pieces of cheesecake you will ever want to see.

Part 1
Ingredients for One 9-inch Sponge Cake Layer
1/2 cup sifted cake flour
1 tsp baking powder
Pinch of salt
3 extra-large eggs separated
1/2 cup plus 2 Tb sugar
1 tsp pure vanilla extract
3 drops pure lemon extract
3 Tb unsalted butter, melted
1/4 tsp cream of tartar
Directions for the Thin Sponge Cake Layer for Cheesecake
1. Preheat the oven to 350º F and generously butter a 9-inch spring-form pan. Sift the cake flour, baking powder, and salt together in a medium-sized bowl and set aside.
2. Beat the egg yolks together in a large bowl with an electric mixer on high for 3 minutes. Then, with the mixer still running, gradually add the 1/3 cup of sugar and continue beating until thick light-yellow ribbons form in the bowl, about 5 minutes more. Beat in the vanilla and lemon extracts.
3. Sift the flour mixture over the batter and stir it in by hand until no more white flecks appear. Then blend in the butter.
4. In a clean bowl, using clean dry beaters, beat the egg whites and cream of tartar together on high until frothy. Gradually add the remaining 2 tablespoons sugar and continue beating until stiff peaks form (the whites should stand up in stiff peaks, but not be dry).
5. Stir about 1/3 cup of the whites into the batter, then gently fold in the remaining whites (don't worry if a few white specks remain).
6. Gently spoon the batter into the pan. Bake the cake just until the center of the cake springs back when lightly touched, only about 10 minutes (watch carefully!). Let the cake cool in the pan on a wire rack while you continue making the cheesecake filling. Do not remove the cake from the pan.

Ingredients for Cream Cheese Filling
4, 8-ounce packages cream cheese (regular variety not light Neufchatel cream cheese), at room temperature
1-2/3 cups sugar
1/4 cup cornstarch
1 Tb pure vanilla extract
2 extra-large eggs
3/4 cup heavy whipping cream
Directions for the Cream Cheese Filling
1. Preheat the oven to 350 F and generously butter a 9-inch spring-form pan. Make the batter for the sponge cake as the recipe directs. Evenly spread the batter on the bottom of the pan, and bake just until set and golden, about 10 minutes. Place the cake on a wire rack to cool (do not remove it from the pan).
2. While the cake cools, make the cream cheese filling: Place one 8-ounce package of the cream cheese, 1/3 cup of the sugar, and the cornstarch in a large bowl. Beat with an electric mixer on low until creamy, about 3 minutes, then beat in the remaining 3 packages of
cream cheese.
3. Increase the mixer speed to high and beat in the remaining 1 1/2 cups of the sugar, then beat in the vanilla and heavy cream. Blend in the eggs, one at a time, beating the bating only until completely blended (just like they do at Junior's). Be careful not to over-mix the batter.
4. Gently spoon the cheese filling on top of the baked sponge cake layer. Place the spring-form pan in a large shallow pan containing hot water that comes about 1 inch up the sides of the pan. Bake the cheesecake until the center barely jiggles when you shake the pan, about 1 hour.
5. Cool the cake on a wire rack for 1 hour. Then cover the cake with plastic wrap and refrigerate until it's completely cold, at least 4 hours or overnight. Remove the sides of the spring-form pan.
6. Slide the cake off of the bottom of the pan onto a serving plate. Or if you wish, simply leave the cake on the removable bottom of the pan and place it on a serving plate. If any cake is left over, cover it with plastic wrap and store in the refrigerator.
Makes Enough for One 8-Inch Cake, About 2 1/2 Inches High

Danise NY is known for cheesecake. Often restaurants across the states say “New York style cheesecake”. I didn’t have any while I was there and now I’m sorry. Surprisingly I didn’t have much junk food at all while I was in NY. I indulged in all the ethnic food, Indian, Thai and Deli. I did treat myself to a soft ice cream cone at my beloved Carvel’s.
The last few times we ate at The Cheesecake Factory we were a bit disappointed in the meal-the shared cheesecake was still yummy.

Jose next time I make a cheesecake I shall have to freeze a piece-if there is any to spare. There are Kosher marshmallows and I’m guessing the same “gelatin” is used for those as the Kosher cheesecake you are talking about.
I do not care for tiramisu and it is because I dislike mascarpone.
I have read to prevent a cheesecake from cracking when baking it, place a small pan of water in the oven. I think it works but I just live with the occasional crack in the topping. Does anyone use the water trick?

I set TIVO to record the new series, NUMBER3S, beginning tomorrow night. Anyone else planning to watch it? Since it begins after football I set the following two shows to also record. The show stars Rob Morrow, David Krumholtz (I have no idea who he is) and Judd Hirsch.

And from personal advice and experience...
When mixing cheesecakes, try not to whip the batter too much. You do not want to incorporate any air into batter. You just want to make it as smooth and lump-free as possible. Slow and steady blending is ideal. Air bubbles in the batter can result in a dry cheesecake, as well as cracks on the surface. -Although some people do think that "real" cheesecakes must have cracks in them. Not so.
And to make your mixing and blending easier, make sure your ingredients are at room temperature. Just take out you cream cheese a few hours before you plan to mix things up. You can also leave your eggs out for a while too - they'll be safe. If you are a little squeamish about leaving eggs out on the counter, just put them in a bowl of very warm water when you take them out of the fridge for about 10 minutes. That will warm them up slightly.
-And if you have a "cool" kitchen like I do, just soak a dish towel in very warm water, and wrap it around the bowl to keep it from "absorbing" the chill from the air while you mix things up. *I have to use this trick a lot when I'm baking in the winter, especially when trying to get the right consistency for creaming butter and sugar for cake batters.
Finally, if you are feeling adventurous and want to turn out your cheesecake...
You have to make sure the cheesecake is absolutely cold and set up or this will not work. Run a thin knife around the edge of the pan if necessary. Unlatch the side of the springform pan (if using one). There should be some condensation on the plastic wrap and/or the cheesecake when you take it out of the fridge. -This also assumes that you've wrapped your cheesecake in plastic wrap before putting it into the fridge. If not, just very lightly sprinkle a few drops onto the surface of the cake. Turn one of your oven burners on low. -A gas stove really comes in handy here. "Take up" enough of the plastic wrap so that it's no longer on the sides and bottom of the pan. Place the cheesecake pan over the flame/heat for about 15 seconds - just enough to warm the bottom of the pan, and consequently, gently melt some of the butter in the crust.
Working quickly and fearlessly(!), place a plate or cake circle on top of the pan/cheesecake. Flip the pan over, holding the plate in place. DO NOT HESITATE!! The cake should fall out. If not, give it a gentle tap here and there on the bottom of the pan. If it still does not fall out, then invert the pan again, and place over the heat for a few more seconds. Repeat.
Once the cake plops out, remove the pan sides, then remove the cake bottom from the cake. Place your serving platter on the cake and flip again. -The plastic wrap keeps the cake from sticking to the plate, and the condensation helps the cake from sticking to the plastic wrap. Voila!
I never believed this would work until I tried it a few years ago, but it does. However, if your cheesecake has some additional toppings on it, you may want to flip out the cheesecake before placing the toppings on it. Additionally, I'm not sure a cheesecake with a sour cream topping - like DR Jane's recipe - would work with this procedure. However, the cookbook I got this procedure from says it will work with any cheesecake recipe in the book, and there are few sour cream topped recipes in the book, so... Maybe I'll find out next week... Or not...

I have read to prevent a cheesecake from cracking when baking it, place a small pan of water in the oven. I think it works but I just live with the occasional crack in the topping. Does anyone use the water trick?
Most cheesecake recipes call for a water bath - place the pan in another pan, and then pour some hot/boiling water until it reaches up he side of the pan, then place it all in the oven. -Or safer yet, pour the water in the pan while the pans are already in the oven. *This is when heavy duty foil comes in handy to wrap around the pan so that the water does not seep into the pan.
I've also seen recipes where it calls for placing a separate pan of water on the bottom of the oven or on the lowest rack.
Basically, it's all to help provide a very gentle and even heat for the cheesecake to bake in. And the moisture also helps too.
However, I've been reading here and there, and different books say different things. Even the latest edition of "The Joy of Cooking" doesn't give a definitive answer to the whole "to water bath or not to water bath" question.
A friend of mine who has a cheesecake business in Richmond does not use a water bath. As long as your oven temperature runs true and there are no hot spots in your oven you should be fine. He also found that just lowering the oven temp a few "ticks" below the suggested temp also helps. In other words, low and slow.
And most importantly, the cheesecake should never fully cook in the oven. It should still jiggle a little bit when you take it out of the oven. It will still continue to cook and set up as it cools. *All you're really doing by baking the cheesecake is cooking the eggs - some recipes I've seen even give a temperature that the filling should be at when you take it out of the oven (using an instant-read thermometer).
I've baked with and without a water bath. I've found no major differences in texture. But I will say baking without a water bath is heck of lot less fussy. -And taking the pan out of the water bath is always an adventure too. And if you position the foil in the "wrong way", a lot of times you'll get condensation running down under the pan anyway, so...

...And if your oven does have some hot spots, the easiest remedy is to place a baking stone or some unglazed quarry tiles (very cheap at Home Depot, Lowe's, etc.) on the bottom of your oven, or on the lowest rack. The stone/tiles should be large enough to cover the floor of your oven with about an inch or two border of space around it. Just make sure to preheat your oven thoroughly in order to help regulate the heat.

Hmmm, I know they said that the 33M on Tues was the highest rated show of the year (or something like that). I could swear they said that it was their best debut.

The 33+ million on Tuesday was their highest premiere ever. The 26+ million on Wednesday was down from last year's second night (which was a MOnday-Tuesday-Wednesday lineup last year). Also last year, IDOL wasn't facing off against the season's 2nd most popular new show LOST (whose ratings were still very potent on Wednesday night even though it did finish second to IDOL.)

There's no way any regular person could order an appetizer, entree and dessert and clean their plates.
I recently spent a week in Florida with a family who ate most of their meals at the Cheesecake Factory. One morning, they decided that we ought to eat breakfast there. Every member of that family (young, old, male, female, skinny...etc.) ate a slice of cheesecake as an appetizer, a major dinner entree as a main course, and a second slice of cheesecake for dessert. I was horrified...and more than slightly impressed!
Has anyone ever been to The Little Pie Company in NYC? They have wonderful cheesecake, but then, everything they make is wonderful - especially their sour cream apple walnut pie! Mmm...sour cream apple walnut pie...

Before signing off for the night, I just had to mention that I was supposed to go to a luncheon today in Cincinnati. Thursday night I received a call that it was being postponed, due to forecasted bad winter weather (which didn't really materialize). Now I see on the closing/delay announcements scrolling at the bottom of the TV screen that the new date is March 19 - the Saturday of the big HHW get-together in NYC. It's a no-brainer - Penny's show wins over a panel discussion about the UN!

It's only a little after five but it's been a long, long day!
Allow me to introduce you to Bonnie--Bonnie Blue. My new 04 Ford Explorer! I am beside myself with excitement!
Congratulations!! The car that I currently have (and have had for about six and a half years) was the very first new car that I bought. Yours is practically new (and certainly newer than either of my two previous cars). Take care of it and it should last a long time. I'm fairly close to 90,000 miles. When I get my income tax refund (hopefully, in a week or so), I'm getting the all of the "big" servicing done. I've had all of the recommended servicing done, and I've had it done at the dealer. It probably costs more, but there was one problem a few years ago. I forget what it was that was going bad, but whatever it was, was much earlier than when it was supposed to be. Anyway, because I had had all of the servicing done at the dealer, THEY paid for most of it! It would have cost me $575, but I only had to pay about $100! That's customer service.

It's interesting hearing how Faber's Scottish accent has been more pronounced this episode since they're in Scotland for this episode. And he's wearing a kilt too!

Back from a delicious dinner at my landlord's restaurant -- which turned out to be quite the place. Long line waiting to get in, interesting crowd, beautiful decor. The food was deevine. And he treated us to drinks, dessert and espresso.

I don't like qualifiers. And what IS an "interesting crowd" restaurant-wise? There are diners, eating. I don't see what makes them boring or interesting, since the person saying that they're interesting isn't sitting with them or talking to them. But I buy the nice decor and the good food - that is the only thing that would get me to the restaurant. The crowd I could care less about.
And if one is spending time with someone they care about and love then it is automatically time well spent - no qualifiers needed. Just as spending time with a bore is time wasted - no qualifiers needed. This is just my peculiar world-view, I suppose, but it suits me just fine. Others can qualify all they like. There was an interesting crowd at McDonald's earlier today and I spent some quality time ordering a Filet o' Fish.
