Whoopie Pies
Adapted from Zingerman’s Bakehouse, Ann Arbor, Mich.

Time: 1 hour

FOR THE CAKES:

1/4 pound (1 stick) butter, at room temperature
1 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 teaspoons baking soda
1 teaspoon sea salt
2 cups all-purpose flour
1/2 cup cocoa
1 cup buttermilk

For the buttercream filling:

3 large egg whites
3/4 cup sugar
1/2 pound butter (2 sticks), at room temperature
3/4 teaspoon vanilla
1/4 teaspoon sea salt.

1. For the cakes: Preheat oven to 350 degrees. In a mixing bowl, cream together the butter and brown sugar. Add the egg and vanilla extract and beat until light and creamy. In a separate bowl, whisk together the baking soda, salt, flour and cocoa. Add dry ingredients to butter mixture in three parts, alternating with buttermilk, and combining well after each addition.

2. Using an ice cream scoop or a spoon, scoop out 12 1/4-cup mounds of batter and place about 6 inches apart on a parchment-lined baking sheet. Bake until tops are puffed and cakes spring back when touched, 12 to 14 minutes. Remove from oven and cool completely before filling.

3. For the buttercream filling: For best results, follow directions carefully, paying attention to required temperatures. Fill bottom half of a double boiler (or a medium saucepan) with an inch or two of water, and bring to a boil over high heat. In top half of double boiler (or a metal bowl), combine egg whites and sugar. Place over simmering water and whisk just until sugar is dissolved and temperature reaches 180 degrees on an instant-read thermometer.

4. Using a whisk attachment on a heavy-duty mixer, whisk egg whites and sugar on high until they double in volume and become thick and shiny. Continue to whisk until cool. Reduce speed to medium and begin to add butter about 1/2 tablespoon at a time, until all the butter is incorporated. Add vanilla and salt. If mixture looks curdled, continue to whisk until it is smooth. Increase speed to high and whisk for 1 more minute. Use immediately or place in an airtight container and chill for up to 3 days, whisking buttercream again before using.

5. For assembly: Using an ice cream scoop or spoon, place 1/4 cup buttercream on flat side of each of 6 cakes, spreading it to edges. Top filled half with another cake to sandwich the buttercream. Store in an airtight container at room temperature for up to 3 days, or wrap individually and freeze for up to 3 months.

Yield: 6 pies.

Cowboy Spaghetti
Recipe courtesy Rachael Ray

Prep Time: 10 min
Cook Time: 20 min
Serves: 4 servings 

Ingredients:

1 pound spaghetti
Salt
1 tablespoon extra-virgin olive oil, 1 turn of the pan
3 slices smoky bacon, chopped
1 pound ground sirloin
1 medium onion, chopped
3 to 4 cloves garlic, chopped
Ground black pepper
2 teaspoons hot sauce, eyeball it
1 tablespoon Worcestershire sauce, eyeball it
1/2 cup beer
1 (14-ounce) can, chopped or crushed fire roasted tomatoes
1 (8-ounces) can, tomato sauce
8 ounces sharp Cheddar
4 scallions, chopped

Directions:

Heat a pot of water to a boil. Add spaghetti and salt the water. Cook to al dente or with a bite to it.

Heat a deep skillet over medium-high heat. Add extra-virgin olive oil and bacon. Brown and crisp bacon, 5 minutes, remove with a slotted spoon. Drain off a little excess fat if necessary. Leave just enough to coat the bottom of the skillet. Add beef and crumble it as it browns, 3 to 4 minutes. Add onions, garlic and stir into meat. Season the meat with salt and pepper, hot sauce and Worcestershire. Add 1/2 cup beer and deglaze the pan. Cook 5 to 6 minutes more then stir in tomatoes and tomato sauce.

Add hot spaghetti to meat and sauce and combine. Adjust seasonings and serve up pasta in shallow bowls. Grate some cheese over the pasta and sprinkle with scallions. Garnish with crisp bacon.

It's the motto of THIS (http://umbrellatoday.com/) neat little website that DR JoseSPiano turned us onto.  You enter your zip code, and it tells you either "YES," bring your umbrella with you today, or "NO," don't.  I imagine in your neck of the woods it would have very little use.     :P

Oh, and you can also tell it to email you or text your cell phone before you leave the house each day.    :)

I ended up working  until 2:30 again yesterday.  Then I came home and had  tunafish on rye bread (no crusts) for lunch.

I rested on the counch for about an hour and tehn I went to the supermarket to do some light shopping and stopped by Blockbuster to return a couple of DVDs and pick up some new ones.

I was thinking yesterday afternoon that I would really like to keep up this part time working - it is so nice running errands in the afternoon and not having to deal with rush hour traffic!

DR CP - QUICKSILVER is written in a florid style - and there are boring stretches - but the theatre "types" are all there and still recognizable.....and some of the feelings expressed about acting, directing, and other aspects of the theatre are certainly still valid.

There is of course also the guessing game of who is who....Orson Welles, Basil Rathbone, and Tyrone Power were all along on that tour.

I read it in a day - it is of its time and place - and worth a day's reading.

I watched SEVEN POUNDS last night . 

The movie is a bit long, but Will Smith and the rest of the cast are very good.  It certainly holds your interest.

The talked about "surprise ending" is not really much of a surprise, since most viewers will anticipate it by the movie's halfway point.

Still, the picture is worth a look.

DRs Jane and George your library info was interesting. I wonder if what you describe is very common in the US.

One other thing is all the libraries here also have to have the same books in French. Not sure what the ratio is. But every time i look up a popular book in English i notice that my library has the same book in French.  I wonder how well translated they are.

DR cillaliz, re: your question last night about my opinion of the DWTS dance-off.

In theory i thought the idea was okay. But i misunderstood how they were going to do it. So i basically think it is a joke.

If they took the 2 bottom vote getters, had a dance-off and then the judges voted it would have been okay IMO.

But instead the judges vote again and their votes count for half. So basically whoever was the bottom audience vote-getter will go home almost for sure. Unless we had someone with a 27/30 vs someone with a 17/30.

I was sort of confused last night. Did they want people to see the songs country style or pick country songs and sing them in their own style? They got mad at Lil Rounds for not singing her country song in an R&B style. Then right after they got mad at Adam for singing his country song in his rock style. That seemed very contradictory.

For sure my least favorite of all the contestants is Michael Sarver. I just don't care for him.  I was sort of surprised (not that they weren't good last night) that they went overboard praising kris allen and matt giraud.

My work project today is the next Criterion release IL GENERALE DELLA ROVERE. It's directed by Roberto Rossellini, but I've never seen the movie so it should be an interesting afternoon with it. There are not a ton of bonus features either, though I have no idea how long these featurettes on the disc are.

I suspect I'll be spending a fair amount of time on this not only this afternoon but also this evening.

These dial idol results are very accurate. I must say i am shock over the results.
Okay no surprise that danny gokey is a clear #1. But i am surprised that simon's
negative comments re: adam (who has been a solid #2) would put him down to
6th??? I am pretty surprised that anoop is a clear #2. Even though he did well
last night. I didn't realize that someone could do well one week and gain so many
votes. Lil is #3, where she has been. It's interesting that even though she got
criticized she stayed at #3. Then you have matt giraud and kris allen. So i guess
the judges praises made a big difference for them. That leaves megan, allison and
alexis as the B3. Alexis had been very popular. But one bad night and she could
very well be gone. It's definitely between those 3 for the bottom. I could maybe
see the judges saving megan. That is crazy that she could do that well and still
be B3. I guess the public really does not like her. Personally i loved her pre-top
36. I like her and her style. But i dislike the way she performs. It's like she's
never been on stage before (which granted she hasn't). But it shows!

I'm awake.  Thanks for the vibes for the leg.  It's all good.  No pain at all today, probably will not do a walk today just to be sure, but all seems normal.  Kinda seemed worse (if you were there) than it is, I suppose.   

Now if I could just get those rhythms correct.....  :)

Just another mention of Donald's radio show. It was a great interview. I listened to half yesterday and finished today (it's 55 minutes and this darn job interrupted my listening pleasure). I hate that IDOL put their results show at 9pm vs LIFE/LOST.  I guess i will watch IDOL live and record the others!

Wednesday has now joined Monday and Thursday as the most crowded in my viewing schedule. However, once LIFE and LIFE ON MARS end, the schedule will smooth out a little bit.

Got an unintentionally hilarious PM from an IMDb user about FF.  He had evidently been in contact with the lying author, who had been decrying the film Frances' inaccuracies.  This guy who PM'd me said he was "inclined to agree" with the lying author that the film wasn't accurate.  Considering the fact that the film was based on the lying author's lies, I find the whole interchange humorous, to say the least.

Not sure exactly, other than to state the tune once through musically and then let the singer go - part of it probably had to do with the brevity of most thirty-two bar songs.  They certainly had stopped doing it by the late 40s.  When we were doing Twiggy's album there was an old-fashioned song we were doing and I asked for the very thing you're talking about - a full statement of the song musically (which we then made sound like an old 78) then Twiggs' vocal.

I think it was a natural evolution from the largely instrumental big band era, which slowly morphed into the pop singer era.  As late as 1953, Percy Faith's megahit "Song from 'Moulin Rouge'" was released both as a purely instrumental tune, and also with a vocal (after the instrumental choruses) by Felicia Sanders.

Gene Kelly's 'teenage bride' Betsy Blair dies, aged 85

The American actress Betsy Blair, who rose from New Jersey chorus girl to
become the teenage bride of Gene Kelly, went on to star in one of the
classic Hollywood films of the 1950s, and later became a Londoner when she
married the film-maker Karel Reisz, has died in London after suffering from
cancer. She was 85.

Blair first met Kelly when she was only 15 and he was choreographing shows
for a New York nightclub, long before he became a Hollywood star with such
films as On the Town and Singing' in the Rain. In a 2001 Guardian interview
she recalled how she inadvertently turned up a day early for an audition and
spoke to a man moving tables and chairs. "I thought he was a busboy. I said,
'I'm here to see Mr Rose' and he asked me if I was a dancer. I said I was
and he told me the audition was the following day."

Blair started to leave when the 'busboy' asked her, "Are you a good dancer?"

Said Blair: "I turned round and said, 'Very'. The next day, I went to the
audition and it was Gene moving the tables and chairs around. He was the
choreographer." Needless to say, Blair got the job and the two fell in love,
spending the next year and half working in nightclubs and in musical
comedies on Broadway.

When she was 17, Gene asked Betsy to marry him. "It was in front of the
Plaza Hotel in New York. We were sitting by the fountain and he said he
couldn't leave me to the mercy of New York when he went to Hollywood. I said
yes immediately. I didn't have any reservations at all. You don't when
you're in love."

They arrived in Hollywood as husband and wife on December 7, 1941, the day
the Japanese attacked Pearl Harbor. Kelly, 29, was contracted to David
Selznick but before long MGM asked him to be in For Me and My Gal and a star
was born.

Betsy claimed not to be fazed by his increasing fame. "I loved his work and
he was a great dancer and he was also a really interesting, educated fellow.
The fact that he was a star didn't matter to me. I was a snippy kid, I never
thought of him as an icon."

After the war, when the couple lived on Rodeo Drive in Beverly Hills, Betsy
also broke into films, appearing in The Guilt of Janet Ames (1947) and The
Snake Pit (1948) alongside Olivia de Havilland. But the parts dried upafter
she became involved in union politics and, like so many other Hollywood
left-wingers, was subject to investigation by Senator Joe McCarthy's House
Un-American Activities Committee.

However, she had one big film part to come - that of Ernest Borgnine's
plain-Jane girlfriend in the 1955 classic Marty, which won all the big
prizes at the 1956 Oscars. It was always said that she got the part only
because Kelly threatened to stop shooting at MGM if his young wife was not
allowed to work.

The marriage came to an end in 1957 and Betsy moved to Paris where she made
films with such European directors as Michelangelo Antonioni (The Cry).
While filming at Pinewood she met the Czech ?migre Karel Reisz. They married
in 1963. He had already directed Saturday Night and Sunday Morning and would
go on to make Morgan and The French Lieutenant's Woman.

In 2003, Blair published her autobiography, The Memory of All That. "I have
nothing bad to say about Gene in any way," she said. "We were married 16
years and it just came to an end."

The church where I sing every week has, for many many years, sponsored a residential addiction recovery program in several neighboring communities.  Well, the program has recently instituted a gospel choir as both a recovery and an outreach tool.  So last Sunday, 40 or so men from the program's gospel choir came to our staid, WASPY community, joined with our choir, and really shook things up.  We learned the gospel "sway".  We learned to shout out "Amen!" in the middle of everything.  All the time.  And we learned to sing songs by rote, without music, and improvise harmony.  And we had a blast.

And now, three days later, I still can't get the danged songs out of my head.       :P

The way I understand about the Big Bands was you got an instrumental, then the vocal, then the instrumental wind-up because that was about the average play-time was on an old 78 record.  I can't remember where I heard this and if it is true or not.  It would seem to me that the big band was the thing...and you wanted to show off the band and feature it, so you had to give them their moment in the forefront and not just have them backing the singer.  In fact, the singer was just another member of the band. 

Druxy, I wouldn't even know what a good New York deli is.  We have some servicable ones around here. One that even claims to be a N.Y. style.  But Langers is a thing unto itself.  It was Harlan Ellison who turned me onto it and told me they had the best pastrami sandwich, bar none, better than anything in New York or anywhere else.  He was absolutely right about it.

Pity, you don't care for chili or b-b-q, 'cause Texas is the place.  They make chili without beans...which is the way it should be done...and I have a decided preference for Texas-style b-b-q over Southern.  Southern is usually tangy whereas Texas is sweet.  For me a b-b-q sauce should be veering toward brown, not red...and shouldn't look like ketchup.  Of course, the best b-b-q, I've ever had I also found in LA...or Van Nuys, to be more exact... out on Sepulveda, a little place called Dr. Holgy-Wogly's Tyler, Texas B-B-Q.  Brisket you can cut with a fork.  And a great sauce.  The hot links are also spectacular as is the macaroni salad.  I believe BK will attest to all this.

I am able to do that with my lap top, however I moved my PC into the dining room and it is now too far away from the modem to plug into it.

I did find out from Comcast that I needed to reset the modem, which they kindly did for me yesterday evening. That helped and at least during the set up it finally recognized the modem

....but my final try last night, after going through all of the steps that the Netgear cd disk asked of me, the very last page on the disk was blank...so I could not figure out if I was done (evidently not, since no wireless worked) or if there were further instructions.

DR MBarnum - Did you reset your modem by pushing in the little button - usually with a pencil or paper clip?

Is the problem with your wireless router? or with your computer? or both? ;)

When you get home tonight, just try unplugging everything power-wise, as well as the phone/cable line from your modem and/or router.  After a few minutes, plug everything back in, and then see what happens.

I rarely use my progressive glasses when driving.  I prefer to use my distance only.

I had some company around lunchtime, and while I enjoyed the visit, I got behind on my viewing and work schedule.

I did watch last week's SMALLVILLE. What a nutty plot, but I guess Clark had to see for himself that he couldn't be open to the world about who he is. Too many people in his orbit would be adversely affected.

I spent the majority of the afternoon watching Roberto Rossellini's IL GENERALE DELLA ROVERE. It was made in 1959, long after his neorealist period. This is clearly a studio-bound film, but a generally excellent one. Really enjoyed it. The transfer is, apart from a few hairs, very beautiful.

There are four interviews among the bonus features, and I managed to watch the first two of them this afternoon. Isabella Rossellini and her brother Renzo talked about their father and their memories of the film. Isabella was only 9 when the movie was released, but Renzo served as assistant and second unit director so he had a good many stories to tell.

...And since George Gershwin spent a good chunk of time down here in Charleston - Folly Beach - writing "Porgy & Bess".  In fact, members of the family of Dubose Heyward - who wrote the original play - are supporters of Charleston Stage, and Julian Wiles, the founding and artistic director of CSC, also wrote a play called "Gershwin at Folly" which chronicles the time that George Gershwin spent here.

DR MB does your PC at least detect your wireless network?  What type of device is your PC using to connect (a network card or a USB device?)

So far I have not tried the PC at all, first trying to get the laptop to work. I did buy a USB device for the PC for when I get to that point.

What a crazy day.  As you know, I booked my flight yesterday and used my business cc to do so (the gal who's paying for the trip had already given me a check for the flight).  Today I get a message to call Continental immediately as they haven't been able to process the reservation.  I call - they tell me the card was declined.  I tell them not possible.  They don't care.  I give them my other card, which I DON'T like to use for business things - that one is fine.  I then call my bank - they've now put a hold on my business card.  Why?  Because Continental was having problems with their network and didn't see that the card had been approved on the first try and so they kept trying to put the charge through multiple times - which, of course, sends up an immediate red flag with the bankcard service and they immediately put a hold on the card.  I had to spend twenty minutes getting the hold removed (they take a LOT of precautions, which is a good thing) - but I just want to call Continental and tell them what peckerwoods they are for doing that and then acting like it's MY fault.

I was so moved by this movie and Sean Penn's performance.

I went to my parents' house last night and afterwards, I stopped at the Costco close to their house.  I bought "Milk" and hope to watch it this weekend. :)

Jennifer, I am curious why you believe that the vast majority of the public is incapable of voting on these programs for anyone except who they consider popular.  If I was going to vote for DWTS or AI, I certainly believe that I am smart enough to vote for the person who gave the best performance and not just for who had the most airtime or the largest fan club.  We are not exactly talking about superstars on DWTS and I don't think that seeing someone several times in the opening weeks on AI is going to make me vote for them if they don't have the talent.

I just watched an interesting clip from the Good Morning Show with Diane Sawyer taking to a neurosurgeon.  He explained how a severe head trauma occurs.  DR JMK, sorry, he also said a helmet would not have necessarily prevented this.

It's the same with me.  I always get Kritzerland shipments later than other people. ::)

DR Cillaliz, didn't know if you'd seen this article about cell phones leading to more mistrials (http://www.nytimes.com/2009/03/18/us/18juries.html?_r=1&th&emc=th).

Yes, I saw it.  In state court the jurors have to surrender their cell phones during deliberations, but they could probably use them before deliberations.

In federal court, you can't take a cell phone in the building unless you are an attorney, but once again, I suppose they could use them outside of court

I love it.   I have watched a number of movies from Netflix instant play.  They have added the Amazon rental now, the upgrades are done without you having to do anything. They upgraded it and the next time I turned it on, there was Amazon and how to rent movies. I haven't rented from Amazon yet.

The Netflix stuff you just create an instant queue from your computer. It has to be the available instant movies, but there are tons of them.  Then when you turn on your Roku, there they are

I still don't quite understand the fall and how she was hurt.  I was wondering if there was more to it than the fall.  I also had no idea people ski in helmets now.  I used to ski a lot (years ago) but have never worn a helmet or seen people ski in them who aren't in a race

I was watching a video clip of Cabaret on the Ed Sullivan Show in 1969. It was withMartin Ross (Joel Grey's replacement), Anita Gillette (Sally replacement). They did not use the original staging,

but there was some interesting substitute lyrics.

My questions are these official lyric substitutes written by Kander or just written for the tv performance?

*This is interesting because a year before on the Tony Awards the used the original lyrics

When I saw a matinee of CABARET in the summer of 1968, Martin Ross and Anita Gilette were the two replacement stars for the performance I saw, but I can assure you those were not the lyrics used on stage.

Ed Sullivan was known to be a prude, and the CBS censors may also have had a hand in those changes. The 1967 Tony Awards were broadcast on ABC (a different set of censors).

Then, with my yearning for musicals still in place from last night, I put in SINGIN' IN THE RAIN. I wish I had listened to the commentary instead of the regular track. I'm not sure I've ever listened to that commentary track all the way through. (It's pieced together with comments from many contributors). I've always loved Ron Haver's commentary on the Criterion laserdisc of the title, so I should give this one a chance. The next time I take it out, I will listen to it.

I finished watching the singers on AMERICAN IDOL. I didn't think a single one of the remaining vocalists was at his or her best (including Danny). And I don't know WHAT the panel was smoking to give raves to either Matt or Megan because they were both poor. Megan's was understandable, but Matt missed many notes and breathed in all the wrong places. They ignore all of the rudiments for good singing. I just don't GET them at all.

Jennifer, I am curious why you believe that the vast majority of the public is incapable of voting on these programs for anyone except who they consider popular.  If I was going to vote for DWTS or AI, I certainly believe that I am smart enough to vote for the person who gave the best performance and not just for who had the most airtime or the largest fan club.  We are not exactly talking about superstars on DWTS and I don't think that seeing someone several times in the opening weeks on AI is going to make me vote for them if they don't have the talent.

I don't think I was clear.  In most cases i would say that on DWTS popularity makes a big difference.

But in this specific case (steve wozniak) - i don't actually think he is that popular or has a huge fan base. What i meant with my comments were that on dialidol last week he was near the top of

I only have one more review item in the stack, Criterion's DANTON which doesn't come out until March 31st. If nothing comes tomorrow for review, I'm going to take tomorrow off and hopefully watch THE ROBE on Blu-ray if it arrives tomorrow as I'm expecting.

If it doesn't come in the mail, I'll still take the day off and watch all the TV from tonight I didn't get to. I didn't even watch the IDOL results show tonight.

I do think DWS is a popularity contest in the beginning.  If you think Cloris Leachman was voted for because she was a good dancer... well....  I think as the show goes farther along the people only there because of popularity start to lose votes.    I vote and will say sometimes I vote for who I like personally or won't vote for who I don't like even if they can dance...I'm sure I'm not the only one

word of the day:  Eyas  ( a bird taken from it's nest for training)   

A friend of mine has a red & blue parrot that will live to be 80 years old or more.  (It was her mother's, who passed away).   The parrot loves to drive in the car, it sits on top of the passanger seat in the pickup truck.  They had to buy a car that will hold the travel cage (which is bigger than me) so they can travel back and forth between Oregon and Ventura with the bird.

I'm sort of hungry, but I'm quite bored of Fruity Snacks and biscotti - the only other options are soup or an English muffin, neither of which sounds appealing.  I only had the pastrami sandwich and one latke for lunch, but it was very filling.  Then I had a biscotti and a half and a pack of Fruity Snacks about three hours ago.

I went to Subway for dinner after work...ALL large subs for $5!!  I got a large Subway Melt (it includes turkey, ham and bacon with cheese) and the couple behind me wanted a large chicken-bacon-ranch sub but without the bacon.  Why get a chicken-bacon-ranch sub without bacon?  Anyway, they offered me their bacon and I took it.  I thanked them and it was good. :D
