Last night, the weekly Phase 10 card game ended in an exact tie!  I totally lost, but my mom and her friend Mona each had 670 points on the last phase when the game ended.  It's probably only the second time in all the years that we've been playing that I can remember an actual tie.

SALTED CARAMEL KENTUCKY BUTTER CAKE
Prep time:  30 mins
Cook time:  55 mins
Total time:  1 hour 25 mins
Serves: 12
 
Salted Caramel Kentucky Butter Cake is a homemade moist and buttery cake recipe with a caramel butter sauce
that is rich, delicious, and soaks into the cake!

INGREDIENTS

Cake:
3 cups all-purpose flour
2 cups white sugar
1 teaspoon salt
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon cream of tartar
1 cup caramel coffee creamer (I used International Delight Simply Pure)*
*(you can substitute Buttermilk, but then leave out the cream of tartar)
1 cup unsalted butter, room temperature
2 teaspoons vanilla extract
4 large eggs, room temperature

Butter Sauce:
¾ cup white sugar
⅓ cup butter
3 tablespoons caramel coffee creamer
2 teaspoons vanilla extract

Salted Caramel, for topping (makes 1.5 cups OR use store-bought):
1 cup sugar
¼ cup water
¾ cup heavy cream
3½ tablespoons unsalted butter
1 teaspoon sea salt or kosher salt


INSTRUCTIONS

Cake:
Preheat oven to 325 degrees F. Grease and flour a 10 inch Bundt cake pan.
In a large bowl, whisk together the flour, 2 cups sugar, salt, cream of tartar, baking powder and baking soda.
In the bowl of a stand mixer or with a hand mixer, blend in (meaning, into the DRY mixture) the coffee creamer,
1 cup of butter, 2 teaspoons of vanilla and 4 eggs. Beat for 3 minutes at medium speed.
Pour batter into prepared Bundt pan.
Bake in preheated oven for 50-55 minutes, or until a wooden toothpick inserted into center of cake comes out clean.
Prick holes in the cake while it is still warm (I use the handle of a wooden spoon - nothing too huge - can also use a wooden skewer).
Slowly pour the butter sauce over cake making sure it gets in all of the holes. Let cake cool completely before removing from pan.
Running a knife along the edges first helps the cake come out cleanly.

Butter Sauce:
In a saucepan combine the ¾ cups sugar, ⅓ cup butter, 2 teaspoons vanilla, and the coffee creamer.
Cook over medium heat, until fully melted and combined, but do not the mixture boil.

Salted Caramel (if making homemade):
In a heavy-bottomed saucepan, combine the sugar and water over medium-low heat until the sugar dissolves.
Increase the heat to medium-high and bring to a boil, without stirring. If necessary, use a wet pastry brush to wash down
any crystals on the side of the pan. Boil until the syrup is a deep amber color, about 6-8 minutes.
Remove the sugar from the heat and carefully whisk in the heavy cream. The mixture will bubble. Stir in the unsalted butter,
and salt. Transfer the caramel to a dish and cool. Drizzle/pour over the cake. You may have some leftover - use it over ice cream!

On my first day of radiation, IU made friends with an 84 year-old Black woman named Bertha, who was on her last treatments, and we had several nice chats. She finished up on Thursday, and I really missed her yesterday.

And where did the week go?  Well, I know that I stayed home and rested a lot, and antihistamined a lot, and blew my nose a lot.

I am so looking forward to brunch tomorrow, but I fear hearing the telephone ring lest I am being called to inform me our plans must be cancelled because it MIGHT be too inclement to go to brunch tomorrow.

My church notified us all that services will be virtual tomorrow (i.e. online) because of possibility of bad weather.

This is so unusual here outside of hurricane season.  Any time a tropical front heads our way, schools and churches automatically shut down for the expected day of impact. 

But snow, freezing rain and sleet?  Here in the south?  Mon dieu!

Ron, here's that recipe.

Texas Citrus Rustic Cake

1 medium orange, or two small tangerines or tangelos
1 large lemon
⅔ cup Texas olive oil
6 ounces raw almonds
1 cup all-purpose flour
1 tablespoon baking powder
4 large eggs, room temperature
½ teaspoon sea salt or Himalayan pink salt
1 ½ cups granulated white sugar

Preheat the oven to 250 degrees. Place all citrus in a pot with enough water to cover the fruit. Bring to a boil, then lower the heat and simmer for 30 minutes to soften the fruit. Pour out the water and let fruit cool to room temperature. You can run cold water over the fruit to speed up the cooling process. Remove seeds and then place the fruit, with skin, in a food processor and puree until smooth. While processing, slowly trickle in olive oil to make a paste. Remove paste and set aside; wipe out food processor.

Place almonds on a baking sheet and toast in the oven for 20 minutes or so. To test, break an almond in half and check for a toasted color. Once they’re toasted, remove almonds from the oven and let cool.

Preheat the oven to 350 degrees. When the almonds have cooled, add them to the food processor and pulse until they reach a fine texture similar to sand. Add the all-purpose flour and baking powder to the food processor, and pulse to combine.

In a bowl, whisk eggs with salt until foamy, then add sugar a little at a time while whisking. (Alternatively, use a stand mixer to whisk the eggs, then slowly add sugar.) Whisk until sugar is mostly dissolved.

Fold in orange paste. Then fold in flour mixture. Do not overmix. Pour into one 10-inch or two 5-inch springform pans and bake for 45 minutes to one hour, or until a toothpick inserted in the center of the cake comes out clean. Remove from the oven and let cool on a wire rack until the sides pull away. This cake tastes better after it has cooled.

Not that I am making this, or will get to taste it, still I was relieved the almonds are ground and I can eat it vicariously.

I had two - yes, 2 -- grilled cheese sammiches for lunch.

I went to the post office, made a quick stop at the local small grocery establishment to "stock up" in case the weekend precludes me getting out, and then stopped at The Triangle to pick up and pay for my sammiches.

Did all of this in 30 minutes.

My HHW dream last night:

A bunch of us were in this movie theater. The house lights were still up. The theater was a large one decked out in red, like the larger Plitt at Century City back in the day, or the Ziegfeld in Manhattan. We were all together in one reserved section in the "stadium" seating in the back half, but the theater at this point was still empty except for us. I was remarking that DR Jrand71 should be about to arrive, when I realized that he was, in fact, there. He was about five inches in height, so he was seated in this little sling of sorts. We were all getting into a nice chat when my tossing and turning from a lower back ache, and the need to visit the Necessary, woke me up. The End.

Oh -- the one other identifiable person was DR vixmom who, by the bye, I would say has been a little E&T in these parts.

Great story near the end of All About Me! Mel Brooks turned down the Kennedy Center Honors the first time he was offered it because it was during Bush Jr.'s administration. Brooks was opposed to the war and said no. When offered the award again by Obama, he said yes.

Sondheim did likewise for political reasons.

I never truly appreciated our Fred Meyer until I shopped at the one on the other side of town.  Keith dropped me off to shop while he got the car washed.  Not knowing where everything was at this location I paid more attention to the store.  It took me forever to find what I was looking for, in fact we will get what we missed at our local one tomorrow.  I need to pick up a script anyway.

The record for the fastest book are still the two memoirs - especially interesting as their both double the size of the fiction books. But this one did go a bit faster than last year's - which was nineteen days.
