It was quite the revelation a couple of years ago when I discovered the difference between real Mexican food and Tex-Mex food. The complexity of spicing in real Mexican food is, well, complex. And realizing that there are many other chiles out there besides jalapeños. That being said...
I love a good tamale. Whether it be filled with chicken, beef, pork, lengua, chorizo, mushrooms, cheese.... or even dulce with pineapple. I still have fond memories of the abuelas selling their tamales from makeshift carts at the top of the Vermont/Sunset and MacArthur Park Metro stations in LA last summer. Each one was different, since they cooked the ones they grew up with, the one from their particular town or village.
Sopes, tostadas, tacos, flautas, etc...
Menudo, posole.... true comfort foods.
And champurrado the Mexican hot chocolate made with corn milk.
