The other day, Zach was pulling a bit as we stepped out of the house.  I lost my balance and my forearm scraped quite a distance along the top of the very rusty wrought iron railing lining the steps.  I got some nasty looking gashes and scrapes.  But they are now starting to heal up.  And I think I disinfected it well enough, so that's good.  

If not, you will soon be DR LOCKJAW.   :o

THE VISIT is back on Broadway?

Miss Frances Farmer was in a production of the show in October, 1965, she designed her own makeup and happened to be wearing most of it when she ran her Edsel into the median of the highway on the way back to Indy from West Lafayette one evening.

The police were not amused.  8)

The Visit - à la Mssrs. Kander, Ebb & McNally - is currently being presented down in Arlington, VA, at Signature Theatre with a cast headed by Chita Rivera, George Hearn and Mark Jacoby.  This is a regional production which is supposed to be followed by another regional production.  As for a Broadway incarnation, well...  ???

However...

I do remember getting a "Jell-O Cookbook" when I was in high school, and there happened to be a recipe for homemade marshmallows.  Well, it sort of went like this:

Pick out your favorite flavor of Jell-O.

Prepare Jell-O using only half of indicated amount of hot water.

Using a hand-mixer, start to beat Jell-O until it cools down, lightens and starts to "fluff".

Stop when you've burned the motor out on your mother's hand-mixer.

Well, here's one...

Green Tea Pound Cake

2 cups bleached all-purpose flour (spoon flour into dry-measure cup and level off)
2 tablespoons matcha green tea
2 teaspoons baking powder
16 tablespoons (2 sticks) unsalted butter, softened
2 cups confectioners’ sugar
5 large eggs, separated
Pinch of salt

Two 9 x 5 x 3-inch loaf pans, buttered and lined with buttered parchement or wax paper.

Set a rack in the middle of the over and preheat to 325 degrees.

Stir together flour, tea, and baking powder in a bowl, mixing well.

Beat the butter and confectioners’ sugar in the bowl of a heavy-duty mixer fitted with the paddle attachment for about 3 minutes, or until light.  Beat in the egg yolks one at a time, beating well after each addition and occasionally scraping down the bowl and beater with a rubber spatula.  Fold in the flour mixture with the rubber spatula.

In a clean, dry mixer bowl, whip the egg whites with the salt on medium speed until they are white and opaque and just beginning to hold their shape.  Increase the speed slightly and continue whipping the whites until they hold a soft peak.

Quickly scrape the egg whites onto the batter and use a large rubber spatula to fold the whites into the batter, folding just until no streaks of white remain.  Scrape the batter into the prepared pan and smooth on top.

Bake for about 60 to 70 minutes, or until the cake is well risen and a toothpick inserted in the center emerges dry.

Cool the cake in the pan on a rack for 10 minutes, then unmold onto the rack, turn right side up, and cool completely.

The above recipe is from one of Nick Malgieri's books.  I've made it a few times, but have found that it doesn't necessarily come together the way it "sounds" like it should in the published recipe. -And I have found a couple of comments online along the same lines.  In any case, here are some of my notes:

Matcha is the Japanese Green Tea that is used for the traditional tea ceremony.  It is powdered.  If you can’t find proper matcha, then it is very easy to grind your own leaves in a clean coffee-spice grinder.  It will take about 3 to 4 four tablespoons of tea leaves to make the 2 tablespoons of powder.  As for the type of tea to buy, Gyokura is the right type.  If you can’t find that, any good quality green tea will work.  And if all you can find are tea bags, then just cut them open and empty them into the coffee grinder – that’s what I had to do!  You can also experiment with the type of tea in this recipe.

This batter comes together very “interestingly”.  When you fold the egg whites into the batter, you will deflate a lot of the whites.  I actually think there is something missing in the recipe, but it seems to come out fine.

Additionally, the original recipe calls for 2 pans, but I think it would make a more traditionally looking pound cake if made in one pan.  –Or in two smaller loaf pans, 8 x 4.
