DR TCB - Next time, just make the burgers thicker if you're using "cheaper" beef. -I'm guessing we're talking about the 80% hamburger? (20% fat). It also helps to lower the temp if you're cooking hamburger with that high a fat content. Or cook them on a griddles or in a skillet on the stove.

As for the meal at The Edison Cafe...

Majorly Errant & Truant DR Jason joined me for dinner.

We both started off with a cup of their Matzoh Ball soup. *The cup of matzoh ball soup comes with one ball, the bowl comes with two.

We both ended up having "breakfast" for our entrees. Jason: egg white omelet, turkey bacon, french fries. Myself: Corned beef hash, poached egg, french fries. -No home fries after 11:00am.

It was the 80% hamburger that I was attempting to cook for dinner. I had the gas grill on low, but the flames that flared up didn't give a fig what temperature I wanted.

Ah... Well, next time - and there will be a next time - form the patties in advance and let them chill for a bit - or even freeze them - before putting them on the grill. There will be flares up, but if you can move them to a cooler part of the grill after the initial searing, that should help. Do you have a two-sided/burner gas grill?
