DR Ron Pulliam, how long do you cook your collards?  The cookbooks I've seen vary widely on this crucial point, and a genuine Southern gentleman acquaintance of mine claims you can't cook them for less than 3 hours, so I'm just curious...


Southerners do love to cook their collards in a pot on the stove.  Many actually cook them in an electric pot out on the back porch....the "aroma" is quite intense.

If one is cooking in a pot, it's a matter of knowing when to cover them and when to stir them and when to dish 'em up and serve 'em.  I think three hours is a bit much....BUT if they are SLOW cooking, I can appreciate the dedication to the concept.


Now it DOES make a difference how much you are cooking at the time.   I happen to buy my collards in a bag, already cut up, de-stemmed and in a quantity sufficient for three or four servings.

However, a mature collard plant can be E-normous...and might take far longer to cook -- and consume -- than my meager portions.

Pressure cooking is a wholly different thing...and the results are spectacular, IMO.

Thank you to FJL, Jose, Ginny, and anyone else I may have missed, for the good  vibes.  However, please don't waste their power on me.  There are a lot of others here (Keith's mother, Dakota's dad, elmore vs. the macbeth's, Jane's travel, MusicGuy and MBarnum's travel, etc., etc., etc.) that need them more than I do.  

I will, however, gladly accept them for Angel and Nicky.

Dearest TCB, Vibes are NEVER wasted on anyone!!  They're in abundance and there are plenty to go around for everyone! ;D

It's supposed to be glorious and warm here today, but the "marine layer" is stubbornly hanging on.

I'm thinking it's a good thing, since it keeps things cool for my walk, which starts in about 12 minutes.

Sheesh.  There's no way I'm catching up around here.  I'm just booked too much at work.

In fact, there hasn't been a day this week that hasn't been shifted around, added to, or tweeked in some manner.  Saturday, Sunday and Monday all started with the phone ringing and waking me up - "Stephen, can you come in early?"  

So I joked with Stacey that she'd be asking me to come in on Tuesday, which had been scheduled as a day off.  Oh, no, she swore that wouldn't happen.

And about half-way through my Monday shift, she's sheepishly asking me to come in on Tuesday, sure enough, because Andre has disappeared and they needed a cart wrangler.  My day off was shifted to Thursday.

Today I was supposed to have a short shift, only five hours.  Nope, make that six, they need me.  And Friday?  Yep, I'll be there from eight-thirty to five, wrangling carts again.

The good news is that I'm making good money, and when I'm outside we've had very good weather (so far).  Bad news?  My legs and feet ache, and yesterday I got a bit of sunburn.  And I'm getting ty-yerd.

One of elmore's favorites, John Jerome, has apparently written a book about his adventures as a thief, record producer, label owner, savior of cabaret, launcher of careers.  There is a website for the book and it becomes readily apparent that there is no publisher or publishing date for the book (it's a little odd to have a book site before there's a book, no?), and the copy that's written about the book is clearly and self-servingly written by him or someone close to him.
