Well, the thing to remember about lard is that is a truly natural product, and minimally processed - and some much "better" for than the "fake lard", Crisco.  So... You don't need to knead much of it into the dough, so...

*I made biscuits once with lard and White Lily flour - truly some of the best biscuits I've made and tasted.

Crisco is truly a frightening product... I'm not much for baking, but on the rare occasions that I need to make a pie crust, I always use butter (or, if I must, margarine). The Lovely Wife(tm) uses Crisco, and I simply find the stuff repulsive. Lard, unfortunately, is simply not an option for a religious Member of the Tribe...

I also remember a Julia Child episode with Leah "Dookie" Chase, where the latter was making fried chicken, and explaining that, of course, in the old days, they'd be frying the chicken in lard. The look of sheer bliss on Chase's and Child's faces, contrasted to the look of sheer horror on the face of my colleague watching with me, remains one of the more humorous moments of my life.

DS Betsy was known to eat Crisco by the handful when she was a child.  And yet she is still about 100 lbs. dripping wet.  I hate her.

I have a pound cake recipe given to me by my Aunt Francis (may she RIP), that she called "The Pulliam Pound Cake".

Among its many ingredients, she listed a cup and a half of lard but, she notated, I may use Crisco instead.

She then finished the recipe by saying that she used lard from a neighbor who raised hogs, her own hens' fresh eggs and her own freshly churned butter and milk from my Uncle Graham's cows, but she reckoned my store-bought would make a fine cake, too.

Interesting article. I can see that I'm not the only one who has been put off by lard. I've aways had a preference for butter, myself.

Just for a change of pace:  I've today ordered the first two seasons of the ridiculous, off-the-wall, hilarious TV comedy "Perfect Strangers" starring Bronson Pinchot and Mark Linn-Baker.  I'm doing the "dance of joy" in my head at the prospect of it!

On Monday, my 22 year old neighbor Evan was in an auto accident.  He is an EMT and they were returning from driving a patient to the hospital.  An SUV crossed the center line and hit the ambulance head on.  Both drivers were killed.  Evan is usually the driver, but his Chief took the wheel for some reason for this trek....

Very sad.

Seems he has been disciplined for his behavior during the out-of-town tryout of Lone Star Love (which closed in Seattle). Looks like the entire cast found his behavior "less than professional"

Well, I will now once again join two disparate themes to tell you that in the land of seeing and revelating the native ideolect is such that "o"'s are often pronounced "ah", so "Lard" is indeed the way they address the Creator.  They also say "harse", etc.
