It's not like being e & t BK...it's more like...not posting....my body count on Kill Bill is up to like triple digits....(I'm usually one of the little people out there in the dark...)  But I DO write fan letters...letting Max off the hook.

Rule of thumb: Any recipe that calls for chicken stock or veal stock when you're trying to make Lobster Bisque is full of the wrong liquids!  Lobster Bisque requires Lobster Stock!

I don't mind that my father's first cookbook called for chicken stock, but for Escoffier to call for veal stock is scandalous!

Fortunately, Jasper White has a good Lobster Stock recipe in his book 50 Chowders.  He starts with splitting two pounds of lobster carcasses lengthwise and removing the head sac from each.  He then puts the carcases and shells in an 8-qt. stockpot, covering them with water and bringing the whole mess to a boil.  After skimming the skum off the water, he reduces the heat to a simmer, then adds a cup of white wine, another cup of chopped tomatoes with their juice, a couple of thinly sliced onions, two small carrots and two stalks celery (also thinly sliced), four crushed cloves of garlic, four fresh thyme sprigs, two bay leaves, a teaspoon of black pepper corns, and a quarter teaspoon of fennel seeds.  This all simmers for about an hour, adding water if too much evaporates.

Salt the stock towards the end with salt, and taste.  If it tastes rich enough, strain with a fine mesh strainer; otherwise, simmer for maybe twenty minutes longer.  Chill the stock quickly, refrigerate or freeze.

Hey, simple!  And it sure beats chicken stock for what I want to do!

On to finding out what I'm supposed to do with the stock once I've made it!

Somewhere in my cookbook collection I've probably got something on proper 'coon cookage, but I'm gonna pass on that for a bit.   Undecided

Jose - Loved your keyboard mishap story last night!  I can just imagine hearing the gospel organ as Noah hands off the staff to Japheth... I love it!  I'm not sure how exactly it happened, but our percussionist ended up about 50 measures ( Shocked ) ahead at one point last night, and was really pounding away on 1 and 3 while Eve was in lovely ballad mode on "Children of Eden."  Quite comical.

Last night's show was surprisingly good (smoother than any of us had hoped), and tonight's was nearly as good.  Guess the kids just needed an audience to scare 'em into shape! Cheesy

Mr. Haines is available for the Cabaret venue - just book it and he'll be there, I promise.
The Cabaret Fest is an annual event.  Tell Mr. Haines that by this time next year we hope to have the house in order so he'll have a place to stay, and we'll find a suitable venue for him.  He'd be sure to be a hit.

Saw a wonderful movie tonight. I'M NOT SCARED, an Italian film directed by Gabriele Salvatores, with gorgeous cinematography by Italo Petriccione. I love movies (well, good movies) from a child's POV, and this one is almost totally seen through the eyes of a ten-year-old boy. It's about so many things - not the least of which is the end of innocence. The film is based on a novel and the screenplay was co-written by the novelist. The movie played at an art-house, so most of the previews were of European and South American films - and they all looked interesting. No remakes. no sequels, no TV show adaptations.

I apologize for not getting up to the Fest. of Books last weekend.  It wasn't one of my best.  Felt really lousy in most ways.  Even flaked on a friend of a friends b'day.  But I wanted to get the 3 BK books.

I just lost everything I wrote, so here I go again...

Reading David Denby's New Yorker review of I'M NOT SCARED, which I put it aside to read after I'd seen the film. (Why do even good reviewers insist on giving away major plot points? I'm SO glad I didn't read this before seeing the movie.) He writes that the film is "a throwback to such movies as FORBIDDEN GAMES and other works of the humanist European cinema of a half century ago. Like FORBIDDEN GAMES, the movie reveals the sordidness if adult behavior as it appears to half-comprehending but pure-hearted children."

This movie once again made me think of how  innocent children used to be not that long agao,. Certainly innocent compared to children today. Something vital has been lost along with that innocence.
I'll post this ASAP before losing it again.

Innocence and wonder and in most cases "love" has been lost DR P.  So many parents have placed things in front of family...that when it intrudes...if baffles them.

I know too many parents who treat their 10 year olds like peers...when they should be 10 year olds...and adjusted annually.
