As for the Topic of the Day...

Hmmm...

The one that comes to mind right now is the Greek meze, Marides Skordalia - fried smelts served with garlic sauce (which is basically just pureed garlic).  The smelts are lightly breaded, then deep-fried whole, bones and all, and they are fried long enough to actually "cook" the bones. -The bones are very small to begin with. You eat the whole fish. -With lots of the skordalia.

Most amazing fish dish I've ever had: Hmmm... I'm thinking it was a poached halibut steak at some fancy restaurant. Or it could have been broiled.

Hey everyone.

Thanks, DR Jose for the nap vibes, lord knows I'd love a nap, and yes, my sanity.  Thankful I have such fantastic people in my life that ensure that I do not go insane - including everyone here!!!

Everything is going well with the show.  We are moving along quite nicely.  Things will pick up this week when we get into the staging of the show even more.  The biggest projects at the moment is the creation of the K2 part (combining elements of K2 and K3 AND the horn part) and figuring out what to do with the damn Car Chase scene.  Both should be easy once we have a concept.

TOD: I once went on a deep sea fishing boat off the coast of the Florida Keys. Caught some fish that was about 2 feet long before my hangover and the motion of the ocean, not to mention the diesel fumes of the boat, made me not happy to be alive. But I got over the sea sickness and we cooked that fish up (my friend, Joyce, also caught one), only to realize the fish was practically all bones. We picked at some delicate, tasty fish, but it was a lot of work for a little wonderful flavor.

I happened to score tickets to both presentations at The Metropolitan Opera today via their new Online Weekend Rush Ticket Lottery.  So, I'll be seeing Les Contes d'Hoffmann this afternoon, and Rigoletto this evening.

*When I picked up the tickets earlier this week, as I was walking way from the box office window, I realized that I had picked up $1000 worth of tickets for only $100. Not a bad deal at all.  -Thank You, Mrs. Rush and Mr. Leichtman.

More dead fish. When I was in Spain, I saw some people order a whole fish that was baked in a salt crust. It was dramatically presented by two men who carried it out on a huge board, and one broke the salt seal with a hammer and chisel before exposing the 5- or 6-pound  fish. The people I was traveling with at the time wouldn't eat fish, so no one else was interested in ordering one. I couldn't resist. On our last night in Spain, I ordered the fish to eat by myself and it was delicious. I ate the entire thing and was I didn't have to share it.

I thought this was some incredible arduous process, but I tried it the following Christmas and it was simple. Cover fish with salt. Bake. Break open salt. Eat.

I now do this about once a year. Making the homemade garlic mayonnaise to go with it is harder than baking the fish.

Favorite fish? Anchovies, trout, halibut, skate, salmon, tuna, mackerel, you name it. One exception: Mahi mahi. Too sweet, too often too mealy.

And I will eat most fish any way you name, from sashimi to deep fried (had excellent deep-fried, Southern-style pollock just yesterday made by an Asian family that works all too close to where I live).

My, that sounds delicious. Love fried smelts.

And grilled fresh sardines. And ... I need to stop thinking about fish.

I got some kind of Seafood Picasso seafood platter somewhere in Baltimore that was great....I still don't know everything that was on it....or where it was....but it was wonderful!

Finished my 58th volume of Anthony Trollope this week and the last work of fiction I hadn't read. It was called "Castle Richmond" and was one of my favorites, perhaps in the top five of his novels. And so a six-year reading project comes to a close. I think I'm going to read some modern stuff before diving back into the 19th century novel.
