Today, I'll leave work early and go to my mom's to visit with Margita and Judy, and have dinner. That's why I made the mini-cheesecakes. These didn't turn out quite right, though. I had one and it was kind of spongy, not dense and firm the way they should be.

Oh, well. It tasted good, just not exactly the right texture. They will, of course, firm up after being in the fridge all night, but still, they won't be the same as when they're the way they're supposed to be.
