Beef, Pork, Chicken, Lamb, Veal.. Heck, even goat... It's all good when prepared well.
Are we including "Fish" as meat?  -Just wondering about the aforementioned "Eel".  

As for the specifics...
The 
osso bucco at Becco.  The slow-roasted pork at Becco.  The 
bisteca Fiorentina at Becco.  -Notice a theme here? 

The goat (
chivo tacos from the taco cart up the street.  *The New York Times just reviewed one of the other trucks down on 96th Street.  Looks like the "roach coach" is going legit!
North Carolina-style pulled pork BBQ.  Strangely, some of the best NC-style I've had has been in VA.
My mom used to make a Chinese Style Pot Roast - basically a beef roast braised in soy, five spice and star anise.  Soooo good.  And, I would also like the pieces of carrots and celery that braised along with the meat.
