Now that I have Christmas put away (for the most part), I'm tackling my new responsibility as Mom's business manager.  Our dining room table is strewn with somewhat orderly piles of paperwork.

TOD:

I know nothing about making casseroles, but my wife makes great ones.

TOD

In theory, I love all things casserole!  But I never think to make any, or to seek out recipes.

Maybe this TOD will help me to get off the dime.

TOD:

Mom made a lot of cream o' casseroles when I was growing up. You know, take a can of cream o' (fill in the blank) soup, add more carbs and a little meat. I generally liked all of them. But I can't eat that anymore because of the carbs and my diabetes.

When I moved to Texas, I discovered King Ranch casserole with chicken, tortillas, cheddar cheese and green chiles. Ooh, so good. If I could figure out a low-carb sub for those tortillas or corn chips, as some use, I'd eat that frequently.

Back in the low-carb craze years (early 2000s?), Trader Joe's sold these with the "low-carb" label.  That's gone now, but I think the chips are the same, and I really like them.  They aren't quite as low as you'd like, but at something like 8 or 9 grams per serving, you can at least plan that part of the recipe accordingly.  The chicken and cheddar are free, of course, and it seems like the green chiles shouldn't be too heavy, or can also be controlled.  Don't forget the cilantro!

(I'm not diabetic.  But I LOVE eating low-carb, and when I do it seriously I can shed the pounds.)

Well certainly NOT low-carb.....but:

One bag of noodles cooked.
Put in casserole dish
One can of cream of chicken soup
One large can of tuna.
Crush a couple of cups of Fritos on top.

Bake at 350 for about 20 minutes or so.

Thanks DR Cilla.  With a little help for the pain & nausea, I finally slept and actually got more sleep than usual.  I am no longer nauseated and up out of bed.  My stomach & back are still a bit delicate.

And I am home from today's peregrinations.  I got three Moross numbers sent to the copyist and then spent a lovely hour gossiping with Jim Wilhelm.

I am wet and in want of a nap,

Futzed and finessed.  When I went to bed last night I was really having second thoughts about the chapter I'd written yesterday and had already figured out a different way to do it.  But reading it this morning I was happy with it and just fixed a few things - it seems right to me now.  And thanks to the always amazing excellent vibes and xylophones, we did have a little miracle this morning.

Thank you.

I had to go to the post office so I went out this morning.  Keith dropped me off and then I walked across the street to the Y and met him there.  I managed 20 minutes on the stairmaster and a slow 2 mile walk.   I felt rather tired but am perking up having finally eaten something.  So far I've done ok with the food.

I've done about three new pages.  I had to do some banking and go to the mail place.  So, I'll try to do two more before leaving - no way I can do more than that before I leave.  So, I'll do as many as I can when I get back after the show.  And tomorrow can be almost all writing.

Ah, casseroles.   I love a corn and tomato casserole....medium can white corn (drained), medium can crushed tomatoes (with liquid), chopped onions (1 medium white onion) and green peppers (for taste...a few tbsps).  Stir in some crushed saltines. Dot with three or four pats of butter. Bake at 350 for 30 minutes, natcherly.

Yum.

It's always better "the next day" when the flavors have had a chance to fully meld.

Well, my Mekeel search was a lot of circles. The Essex Country Police gave me the run around to the New Jersey Dept. of Corrections website, which was no help, and the Essex Country Prosecutor's Office gave not much of a big goddam either, directing me back to the NJ DoC website!

At this point, I'm tired of the afternoon runaround.  Perhaps I'll try again down the pike.

TOD:

I think the only other thing that my mom used to make that came close to a casserole was shepherd's pie, which I really loved, especially the way she made it. You see, my mom and I both hate peas, so she made it with green beans instead. If I go to a restaurant and ask if I can have the shepherd's pie without the peas, the answer is always "no" because it's always pre-made - very annoying.

I find this funny.  I also grew up with shepherd's pie.  Never did I imagine it as anything like a casserole, which we didn't have at home. :)

DR Amy, your mother also used lamb vs beef that is used for Cottage Pie?

I'm sorry you hate peas so much.  Green beans actually sound good.

Casseroles:   I've made a broccoli casserole, that's about it.  I mentioned to a co-worker (in his 30's) that I had made it for Thanksgiving. He said that someone had just told him about a green bean casserole and that he had never heard of casseroles until then.
