As for poaching chicken...

I like the traditional Chinese method where you place a whole chicken in a pot, cover it with cold water, then bring the water to boil.  Then once it starts boiling, you turn the heat off, cover the pot, and let it sit undisturbed for 30 minutes.  -Jeff Smith, "The Frugal Gourmet", advocated this method.

The chicken comes out perfectly cooked and moist, and then it's just a matter of pulling, shredding and/or cutting the meat off the carcass to use in the recipe of your desire.

*The poaching liquid is basically tasteless, very bland.  Yes, you could use it to cook something else, but it really would not add any discernible flavor.  The point of poaching is to gently cook something in order to retain as much of the flavor as possible.  Now, if you boiled it for a longer period, and cooked it until done, then more of the chicken flavor would disperse into the water/cooking liquid.

Thanks.

What's the difference between poaching and boiling a chicken?

Poaching = Water at gentle simmer.

Boiling = Water rolling away.

The Small Back Room is a great film, one of my favorite of the Powell and Pressburger films.  There is a scene on a beach that is one of the most suspenseful in all film, and was clearly the model for the 70s film Juggernaut, also a very good film.

I'll say it is. I was squirming in my seat and jumping at every moment. One of the greatest suspense sequences I've ever seen.

And that surreal sequence with the clocks and whisky bottle: Minnelli and Cukor both appropriated it for comic effect in their surrealist scenes in FATHER OF THE BRIDE and PAT & MIKE.

Some favorite films from the 1980's I am sure I missed some. But I think the 1980's for me was the last great decade for me watching movies.

in alphabetical order I think it is an eclectic  selection.

9 to 5
After Hours
Airplane
Back To the Future
Blade Runner (Probably in the top films)
Brazil
Broadway Danny Rose
Crocodile Dundee
A Fish Called WandaThe Dark Crystl
Driving Miss Daisy (There is a family connection to the characters)
The Elephant Man
ET
Fame
Ferris Bueller's Day Off (Matt Hough's least favorite film ;D)
A Fish Called Wanda
Flight of the Navigator (Guilty Pleasure)
For Your Eyes Only (One of the best of the Moore Bond films)
F/X
Ghostbusters
Gremlins
Hannah and Her Sisters
House of Games
Indiana Jones and the Raiders of the Lost ark
The King of Comedy
Labyrinth
Ladyhawke
THE LAST STARFIGHTER
Lethal Weapon
The Little Mermaid
Little Shop Of Horrors
Mad Max 2
Mad Max 3
Manhunter
Mannaquin (Another guilty pleasure)
Married to the Mob
Mystic Pizza
Never Ending Story
Outrageous Fortune
Poltergeist
The Princess Bride
The Purple Rose of Cairo (Despite the Ending)
Raising Arizona
Romancing the Stone
Ruthless People
September
Spaceballs
Tootsie

Anyway, lunch ran late, and I had some phone calls during the afternoon, too, so it took all my viewing time this afternoon to watch THE SMALL BACK ROOM. Quite wonderful (except for that rather tedious romantic tiff), and I'll enjoy watching it again tonight while I listen to the commentary. Didn't have time I fool with any of the bonus features on the disc. There appear to be three (including the commentary).

(And I enjoyed it much more than the stage version, and I saw the national tour with Julie Harris as Miss Daisy!)

TOD:  Loved Splash, Big, Breakfast Club, The Color Purple, Raging Bull, Risky Business, Out of Africa, Working Girl, there were so many good ones then.  The least favorite was Tron (ugh!), The Goonies, Oscar.

My interview went pretty well but they did give testing for spelling, typing, and Excel.  I did great on the 1st two.  I did better on Excel on other tests but this I only got 55%, dang!  I was so upset with myself.  After I chose the answers, I realized it was wrong after it was too late.  Well, we'll see.  Then I got home and had another message from The Alzheimer's Association as I sent them my resume for a Help Desk Specialist.  I have an interview with them on Monday at 1:00 p.m.

Time to pack up and head for home.  We're out of chicken, so I wonder what DH Richard has up his sleeve for our dinner?

Bye for now!

CASTING COUP?

Quote
WILL SYLVESTER STALLONE STAR IN 'THE SOUND OF MUSIC'?

LONDON —

At the London Palladium the other night, I sat next to the hard man of Hollywood action himself — who was watching the camp-fest musical!

He cried and laughed at all the right times — and spies tell me that bosses now want to lure him to play Capt. Von Trapp on stage. Will he say yes after going to meet them backstage after the show? We'll keep you posted.

And maybe John Travolta as the Mother Abbess?

I haven't mentioned anything about it here.   As yet.

Too much talent to compete against!     :P

So....you just dangle this thing about being on tenterhooks, so to speak, and say you're hopeful about your submissions...and nobody here knows what it is you're talking about?

Is that your story?  And are you going to stick to it?
