I just open some cans when I make chili.

I like white chili the best.

does anyone else here have a favorite chili recipe they would care to share?

1 pound ground beef
1 small onion, chopped (optional)
1 tsp. salt
1-2 tsp. chili powder
1 bay leaf, broken in half
1 tsp. Worchestershire sauce
2 8-oz cans tomato sauce
2 16-oz cans Brooks chili beans (mild or hot, your choice)

Brown meat & drain.  Combine all other ingredients & simmer 2-3 hours.  Remove bay leaf before serving.

DR Vixmom - this is my go-to recipe.  I cook it in my crockpot on low for 4-6 hours.  The recipe doubles well and a double recipe just fills my crockpot.

Are there any requirements? Restrictions?

Is a "true" chili cook-off? Just a "bowl of red"? -No beans, no tomatoes, etc.

I don't think there are any rules except it must be homemade

Most of the chili's I've made have been "dump" affairs.

I usually...

Dump some meat into a Dutch oven (or heavy-bottomed pot) - ground beef, ground turkey, ground chicken, cubed beef, cubed chicken, etc. Add a tablespoon or so of oil to help with the browning.

Then dump in some onions and garlic that you have chopped up.

Then add some cumin, chili powder, oregano, salt and pepper. -And cayenne, red chili flakes, chopped fresh jalapenos, etc., if so desired.

Stir and cook that all up until the onions soften.

Then add a big can of diced tomatoes. -Yes, tomatoes. Add some water if it looks like it needs it.

Then add a can or two of beans: kidney, black beans, pinto beans, etc. -Yes, beans.

Then let it simmer until it starts to thicken up a bit.

*And, a secret I learned from a chili cook-off champ: always add a little bit more cumin and chili powder towards the end. The "fresh" spices add another layer of flavor.

**Also remember that chili always tastes better the next day. Make a batch, eat some of it if you wish, then refrigerate the rest. Reheat it gently when it comes to serve it.

Gourmet magazine had a great recipe for a White Bean Chili which I also "use" from time to time. It works best with ground pork or chicken. Basically, chop some onions, brown them. Then add the ground meat. Season with a generous amount of cumin. Then add a can of diced green chiles, and a can of white beans. Let that simmer for at least 15 minutes. Add salt and pepper to taste.

I always reheat this sort of thing in a double boiler to avoid scorching.

Vixmom, Betsy is making a delicious chili this week, but I'm afraid JohnG would probably disapprove, as it won't have meat and will have beans.  I never knew that Texas chili didn't have beans until I watched that episode of Top Chef:  Texas.
I still haven't seen that episode, even though I was there.

And yes, you are correct, no beans, no corn, no tofu, no faux-fu (for the tofu intolerant), no potatoes and for some, no tomatoes, either.

No tomatoes?

Odd dreams, as if I were still back in law school, only with the lower energy of a 50-something rather than the higher energy of a teen or 20-something.  I wonder if remembering my law school drama group escapades last night caused these dreams.

Jrand, please don't interpret, or at least don't interpret unless you can give a substantial discount on the Dream-o-matic reading.

I thought FJL wrote "don't interupt," and I was wondering how you interupt on a typed site.

I had a very, very unpleasant incident on Thursday, followed by some unexpected and very bad news on Friday. I am still reeling from it. Some of this is fall-out from a very poor economy. I am trying to cope.

Oh no, Jeanne, I am so very sorry!

I am having a problem with three pdf files for DEAREST ENEMY that I have not had with the other 18 pdf files for the show: my printer refuses to print them! Theylook fine on the computer screen, but when I try to print, they begin a download and then shut down.

Can you try saving those three under new names, and then see if you can print them.

I'm working on my brief.  I have the intro garbage and my main issue finished, I have a couple lesser issues to brief then I can quit for the night and put the whole thing together tomorrow and get it in the mail.  Hoo and Ray this thing will get mailed.....ON the due date for mailing...which I hate to do, but it will be done and in the mail.

I was working in my briefs, also; but then someone came to the door.

I will look for a chili recipe for you, Vixmom. I have asked for one from a local restaurant that does a Frito Pie Po'Boy, which sounds great to me. Because you wouldn't just chili, when you can add all those carbs to it.

Boxes and boxed and taped up and labeled and pre-paid for UPS.

And now...

A little break before I pack up all the little things. Which, alas, always takes up the most time.

Do any of you fine folks know (or remember) the name of a sort of puzzle game I had when I was a kid.  It had three spindles and circular discs of smaller to larger diameters which fit on the spindles.  The goal was to get the discs from one spindle on the left to the one on the right without ever putting a larger disc on top of a smaller disc.

And a related OH!!

bk may have answered this before, but just in case...

DR TCB - I believe the reason bk moved the Kritzerland evenings to Sunday nights was to make it a bit more "family friendly", at the very least, more "worker" friendly. His time slot at The Gardenia was always at 9:00pm on Wednesday evenings. At Sterling's Upstairs at Vitello's, he's able to have an earlier time slot, 7:00pm. Since the shows usually just run an hour, everyone is able to head home shortly after 8:00pm instead of 10:00pm.
