Finally found the time to put a big pot of borscht on the stove. Love this soup, probably speaks to that quarter Russian in me.
But it's a funny soup. Every time I've tried a Russian recipe, the emphasis is on the beef broth. American versions seem to be about the beets. I guess it was meant as a way of getting beef, or beef flavor, at least, into one more peasant meal. I love a strong beefy flavor.
Going to let it set overnight before eating it.
