Did I sleep well last night! I'm absolutely amazed. At 4:00, however, it all went to hell: the cats were suddenly quite rambunctious. One of them started to destroy the window blinds, one noisily attacked a scratching post, and several of them raced around the apartment, leaping in and out of the huge Bounty paper towels carton I call "Anabelle's summer home. Then, after that 30-minute bout, I fell back to sleep.

I dreamed I had been working on a production of Little Mary Sunshine somewhere, and I was visiting my best friend from college at his parents' home in Springfield, Ohio. My friend's name was Charles Irvine, a wonderful actor with huge drug and alcohol issues that killed him in 2009. His family was Canadian, from Toronto, and his great-grandmother had been a lady in waiting to Queen Alexandra. Charles' father worked for Aeronca, as I recall, and his mother Ethel was a very funny, ditzy lady. I was quite fond of her.  In my dream, she was nothing like she was in reality.

Charles married my friend Shari Caldwell, and they moved after graduation to London, where he enrolled in the Central School of Drama. After that, they settled in Toronto until they divorced. Shari stayed in Toronto with their son and became a success actor's agent. I don't know much about his life after that. In my dream we were still in our early 20s.

REGULAR PAPRIKA: Most of the paprika sold in grocery stores is simply labeled “paprika”, or less commonly, “sweet paprika” to differentiate it from “hot paprika”, meaning cayenne pepper. "Supermarket paprika” tends to be mellow (neither sweet nor hot).

HUNGARIAN PAPRIKA: Paprika is the national spice of Hungary and there you’ll find 8 different grades of Hungarian paprika. 😱 height=1 (They mainly differ in pungency and heat, but also “quality”).
Hungarian gulyas (goulash), the national dish of Hungary, heavily emphasizes paprika (it is the main spice used and provides most of the flavoring).

SPANISH PAPRIKA (or PIMENTON): Spanish paprika can be mild or hot, depending on the blend of chiles used. It also tends to be less intense (less pungent) than Hungarian paprika, but could be more bitter than “regular paprika.” I would caution against substituting with Spanish paprika unless you’re familiar with the spice.

SMOKED PAPRIKA: Smoked paprika adds a lovely smokiness to “regular paprika.” The smoke flavor is created by drying the peppers over wood fires first. In Spain, smoked paprika is called pimentón de La Vera, and it is frequently used in Paella.

SUBSTITUTIONS: I find you can usually substitute “paprika” for smoked paprika (though some flavoring is lost) but smoked paprika is generally not a great replacement for “regular paprika.”

I have that Bounty towel carton to drag to the basement after kitty cleanup. Then I have to write a harp cadenza for the ballet number I worked on yesterday. Then I will begin to orchestrate it.
