In Italy, all the dishes with Mozzarella were prepared using Mozzarella di Bufala (buffalo). Of course, the animal is a different kind of buffalo than our western version.
And I used to buy smoked mozzarella in a local store and cut it up over a steaming hot plate of spaghetti bolognese. OOF-TAH!
There were always pieces for my kitties, as well, and they LOVED it.
