For Vixmom - my recipe for Faux Chicken Stroganoff
For two: Two large boneless, skinless chicken breasts cut up into small pieces. One brown onion. one can Campbell's Cream of Mushroom soup, Knudsen's sour cream, Heinz 57 ketchup, salt and pepper, butter, milk, white rice or penne or farfalle pasta.
In a frying pan, melt butter and sauté the onions but remove before they're TOO cooked - put on a plate. Melt another pat of butter and put in the chicken pieces, add salt and pepper, and sauté until they're fully cooked, moving them around occasionally. When fully cooked, put the onions back in the frying pan and put on a low heat.
Empty the can of cream of mushroom soup into the frying pan, and fill the can with milk and put that in. Eyeball it and see if it needs a bit more milk once you've stirred everything together. You don't want the sauce TOO thick. When everything is stirred, add a little ketchup - this is basically for color and a little flavor - sauce should be a very light pink so don't overdo the ketchup. Stir that in. Raise the heat to medium and add the sour cream - two large tablespoons should be fine. Stir that in and let it all heat up nicely.
Meanwhile, you've prepared your white rice or penne or farfalle pasta. Put your rice or pasta on a plate and then serve the faux chicken stroganoff over it. Eat.
