For what it's worth, the crunchy layer at the bottom of paella is call socarrat. It can't be burnt and it can't be too loose. It's an important part of judging a paella competition.

Decided to go out this afternoon for the Covid booster. I'd intended to do it back in the late fall, then my schedule went crazy and then Nathan had Covid a few weeks ago so I had to let that pass. But it's ketchup time around here, and I'm getting that this afternoon.

I still need to get the shingles vax and I'll probably get the RSV, too. But I'm doing them one at a time. I know you can stack 'em, and DR Elmore just did two of them successfully, but if I'm to have any reaction at all (usually a day of mild fatigue), I just want to know which one was responsible.

Smart. I had RSV, covid and flu at the same time last year, and one definitely knocked me out.
