Most Texas barbecue, except east Texas, doesn’t have much to do with sauce. In east Texas, they pour it on everything and theirs is tomato based. Like the deep South, they also like hickory for smoking.

In the rest, they use oak or mesquite to smoke the meat. Sauce is more something saved for the bread. I do like espresso sauce with smoked beef ribs.

Brisket is Texas’s favorite meat for ‘cue.

There are EIGHT cars on both sides of the street, although one of them belongs to the realtor ...  so lots of interest  ... since the open house just started 10 minutess ago.

Oh....someone else just pulled up.

I don't remember IV's being painful. Not particularly pleasant, but not painful. At my last colonoscopy, my hand was so dehydrated that they used my inner elbow -- where they take blood out for the lab and donations. I've been blessed with a really good vein there.

I refuse to let them do my hand anymore, it just hurts too much and leaves me with a bruise.  Fortunately they rarely want to use my hand.

We don't have any vegans in this bunch that I know of, so I made the pretzel bites with butter and an egg wash. Oh my goodness. So much better than using just olive oil.

I just saw a little clip from a production of The Play that Goes Wrong here. Every single actor has one of those awful mics running down their cheek. Is this generation of actors not capable of, I don't know, PROJECTING? Now they must be coddled and babied?

I also started listening to Geraldine Brooks’s memoir, Memorial Days, which is about the death of her husband, Tony Horowitz. I am not familiar with his writing. But I like hers.
