I LOVE cheese enchiladas with green sauce. I had to stop eating it, though, because cheese aggravates my allergies. So these days I stick to veggie tacos without the cheese.

Aside from the delicious ones I had with DR John, I had excellent ones in Albuquerque at the restaurant in our hotel.
We had originally walked over to the, supposedly, best Mexican restaurant in town. It my have been, however, it a quick eat place with no atmosphere. We wanted to relax with drinks, plus I don't think they had anything vegetarian. After a walk around town we headed back to the hotel restaurant and were pleasantly surprised.
