Tagine is a wonderful dish when done properly and it’s a pretty serving dish at any point. But real tagine means cooking everything together with the lid acting as a sealant. You have to be trusting that you cooked everything long enough.

Dissatisfied with my doctor at my last check up I switched to Keith's doctor whom he raves about.  I barely mentioned half of what I told my previous doctor about my symptoms and he asked all the right questions, then told me what he wanted done.  He didn't ask if I wanted a referral or offer a second appointment to discuss my stomach issues.   He ordered the cancer test, as he should have since I was overdue for one, and set up a referral with a specialist to discuss an endoscopic ultrasound.  Maybe I will have one, maybe not but at least my doctor is listening & concerned.

Thanks, DR John G. Was just wondering if it's a cooking method for all varieties of dishes, or if it's mainly one kind of thing that you'd cook in that pot.


There's another kind of vessel too, I think, made out of clay. You soak it in water for a long time, then put it in a hot oven and it steams the food inside. Probably totally unrelated to a tagine.

Thanks.  I liked my doctor well enough until this last appointment.  I felt like she was giving me third degree without really listening to me.

While we were in Astoria I received a text from a long time friend saying she needed to talk to me.  Fortunately we were on our way back to the hotel for a shot break and I could call her.  I never know if calls like this or good news or sad news about a mutual school friend.  This time is was good news :)

She also wanted an easy vegetarian recipe for the wedding shower of her soon to be daughter in-law who is a vegetarian.  I just sent three recipes, including mushroom cutlets from the first vegetarian meal she ever served us.

I would Google tagine recipes or uses of a tagine. BTW, if you have a Thousand Villages store in your town, that would be the best place to look for a tagine. The prices there on tagines are far better than, say, Sur la Table or Williams-Sonoma. They're also handmade and look better.

I have started to watch The Secret Lives of Dentists with Campbell Scott and Hope Davis. It's based on a Jane Smiley novel, The Age of Grief, that I haven't read. I like it, but it's also depressing. I think I'm going to pass on finishing it up tonight and concentrate on the rest of my Maigret novel.
