I also made potato salad using what I had on hand. Potatoes, scallions, red onion, celery and kalamata olives. The dressing is a classic French of oil vinegar and Dijon mustard, poured on when the potatoes were hot, and then a little mayo when it was cool.

It sounds good except for the kalamata olives which aren't my favorite.  I sure would like to try it.
