Rice Krispie Chocolate Chip Cookies are a delightful twist on a classic favorite!  These cookies are crispy, chewy, and loaded with melty chocolate chips and crunchy Rice Krispies for an irresistible texture combo. Perfect for snacks, parties, or a late-night treat!

 Rice Krispie Chocolate Chip Cookies
 Ingredients:

1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup semi-sweet chocolate chips
1 cup Rice Krispies cereal


 Directions:

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients, mixing until just combined.


Gently fold in the chocolate chips and Rice Krispies, being careful not to crush the cereal.
Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 8-10 minutes, or until the edges are lightly golden and the centers look slightly underbaked. Allow to cool on the baking sheets for 5 minutes before transferring to a wire rack.


Serve warm or store in an airtight container for up to a week—if they last that long!
Crispy, chewy, and loaded with chocolatey goodness, these Rice Krispie Chocolate Chip Cookies are a guaranteed hit!

Last night, I watched the Netflix documentary Ghislaine Maxwell: Filthy Rich, a follow-up to their 4-part documentary Jeffrey Epstein: Filthy Rich. What a disgusting woman and pimp.

I thought both of these were quite good and rather unsettling.

Oh my, I didn’t mean to be away so long. Terrible internet connectivity issues threw me into mental disarray at a time when I was hosting an industry webinar for work. Telecom people had to come and rewire my house, essentially. And never really figured out the problem. But the work computers are now connected directly to to modem, so wifi issues shouldn’t affect work anymore.

Thank you. Yes, I ended up hosting this live webinar with three female titans of the industry with me sitting on the floor in front of a chair trying to look like I was in an office. (Our webinar software of choice doesn’t allow for fake backgrounds). But I made it work.
