I made some chicken mushroom soup today. I got a 5 pound box of mushrooms for $7 on Friday. We're having mushrooms with everything.

I love a five-cheese mac and cheese with fontina, sharp cheddar, Swiss, gouda and Pecorino Romano. Maybe a touch of truffle oil. And a buttery panko topping.

Well I liked Velveeta and still use it to make mac and cheese.

I suspicion Velveeta isn't much worse for you than most things labeled "American Cheese". My understanding is that they're all below a standard allowing them to be labeled actual cheese as opposed to a cheese "product". I wouldn't sweat it.
