I usually fry them in a bit of oil with green onions or a green pepper......meatballs, that is.

Off to the mystery rehearsal - who will be there?  Who will be in what role?  Will the director show up?  That last question is the only one I have a definitive answer for.

I guess Ben, and Jack, and I will have to be the Spam Fan Club.  And how can you eat a burger in Hawaii without a slice of Spam on it?

Count me in, too!  For a hot-weather meal, my Mom used to make a chef's salad using strips of fried Spam instead of ham & turkey.  With French dressing, it was one of my favorite summertime dinners.

DR Ben, the exhibits at the Lincoln Center library are wonderful! The one on the main floor is a Noel Coward exhibit: costumes, posters, sheet music, video clips, photos, ephemera, lyric sheets, Bea Lillie's sctipt for HIGH SPIRITS, all accompanied by a wonderful soundtrack of Coward songs. It's quite an event.

The exhibit downstairs on Amsterdam Avenue is a history of revue: scripts, music, posters, photos of the Zeigfeld Follies, George White Scandals, Garrick Gaieties, Lufe Begins at 8:40, Pins and Needles and others. They are both very wonderful exhibits.

So, I am home, the AC has been turned on, and I will chill out for a bit.

Thanks for the report. I've heard wonderful things about the Coward exhibit. We are planning a visit after we return from Minnesota. I didn't know about the Revue exhibit. We will have to make two trips. One for Coward and one for the Revues.

Ugh, it's hot (I'm a baby when it comes to heat). I may turn on the AC and sit in the bedroom. Anthony is blissful in the living room where it is just as hot (we only have AC in one room).

I have to tell you that ever since I wrote the notes talking about edge enhancement, aside from one person trying to make trouble and failing miserably, it seems to have actually had an effect - there hasn't been ONE post about edge enhancement in the Journey to the Center of the Earth thread since.  Not one.  There HAS been one post by someone who recently saw the disc saying he did not see one iota of edge enhancement.  I think I made it so easy to understand and so irrefutable, that it finally shut up the know-it-alls, who have, of course, disappeared completely from the thread.  But that doesn't mean they didn't cause some damage with their posts, but hopefully from now on they'll think twice about their witch hunt knee-jerk posts and really try to understand what they're seeing.

MEATBALLS BAKED IN SOUR CREAM

2 pounds ground beef
1/2 cup chopped onion
1/3 cup chopped pimiento-stuffed olives
2 eggs, slightly beaten
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup (1/2 stick) butter
2 tablespoons flour
1/2 cup water
1 teaspoon lemon juice
1/2 teaspoon Worcestershire sauce
1/4 teaspoon paprika
1/4 teaspoon salt
1 cup dairy sour cream at room temperature

In a bowl lightly mix beef, onion, olives, eggs, salt and pepper just until blended; shape into 24 balls.
In a skillet melt butter; brown meatballs slowly on all sides and cook until done. Place in shallow 1 qt. casserole dish.

Pour off fat in skillet reserving 2 tablespoons; blend in flour. Add water, lemon juice, Worcestershire sauce, paprika and salt; cook over medium heat, stirring constantly, until thickened. Cook 2 additional minutes.

Remove from heat; carefully blend in sour cream; pour over meatballs. Place in preheated 350°F oven for 10-15 minutes. Garnish with chopped parsley, if desired.

Makes 8 servings.

Since when I .ake them I usually make 20-30 I do not think they would all fit in a fry pan. I have been boiling then and then letting them simmer in a sauce for quite a few years.
