the recipe looks good.  i'm curious what the diff is between this & the book.  it is possible the recipe evolved over time.
That's it, make me cheat and go into the books out of order!

Baked Macaroni and Cheese

1/4 pound rigatoni macaroni
2 T unsalted butter, plus more for greasing pan
1 1/2 T all-purpose flour
1/4 t salt
1/4 t freshly ground white pepper
1 1/2 c milk
1/2 lb charp Cheddar cheese, cut into 1/4-inch cubes
1/2 t Worcestershire sauce

Cook macaroni accoring to package instructions, drain.

Preheat oven to 375 degrees.

In a 1-quart saucepan, melt butter over low heat.  With a wire whisk, mix in the flour, salt, & pepper.  Cook 1 to 2 minutes, or until a smooth mixture forms.   Continue to whisk and gradually add the milk; cook about 5 min., until the mixture is thick and smooth.  Remove from heat.

In a large mixing bowl, combiine the cooked macaroni with the sauce, cheese, & Worcestershire sauce.  Pour into a buttered 8x8x2 pan and bake for 25 min., or until the top browns.

It was another very busy day at work. I really love it when it's busy but not manic or chaotic  I had one of those good days.  I am also very glad I cancelled my trip to Iowa City on Thursday. It would have been fun to be on a career panel for law students, but I didn't want to leave when Cal was sick. She's better, but I didn't know that when I thought it was time to cancel.  In the meantime I've scheduled 2 court hearings and an appointment that day.

And NO WORCESTERSHIRE SAUCE???

Of course, while the dish may have evolved over time, there's also the possibility that someone posted their own fave recipe.

(Oooh, that sounded snarky, didn't it!   ;D)

It isn't macaroni and cheese if it's anything other than the original. Just Mac and just cheese.  My 2 cents

no, u could be right.

 i don't use sugar or worcestershire sauce, sugar seems a bit sweet.  i also make mine with flour and use a combination of milk & sour cream.  i prefer colby jack to all cheddar.

I'm going to have to think this over.

I've a cookbook that has an entire chapter on mac and cheese varients.  Of course, all of the recipes make way too much for the two of us.

i rarely make mack & cheese anymore.  it's so fattening, especially with sour cream. :D

it freezes very well & you can put it in smaller containers to use as a side dish.  if i haven't planned ahead i find partially cooking it in the microwave before baking is ok.
