I'm sort of amazed right now... There have been quite a number of pages over the intercom for various passengers who have checked in, but have not yet boarded their flights.  I always wonder what could have happened to someone between the security check-point and the gate.  Seems kind of Stephen King-ish to me.

I am such a bad cook; I can never get all the things to be done at once, unless I cook in a crock pot. But I always try!

I have made the cornbread for the dressing and am now making the cranberries.

I've never really ridden the subway during the wee hours of the morning, but I've heard things here and there about what one could see and hear - and smell - on the subways during the wee hours of the morning...

Maybe that's why they call it the "wee" hours?

Thanksgiving morning greetings!  It seems so odd not to have our house set up for the family extravaganza today.  Richard and I, along with my mom, are going to Richard's brother's house in Cincinnati.  That brother is the father of the nephew who just returned from Iraq and he (the nephew) is visiting his parents.  We'll be glad to see him and he'll be glad to see my pecan pie.  

Of course, it's different not to have Harriet and Richard and I are dealing also with our DS Rob being away from us on a holiday for the first time.  We were wondering last night if it's as weird for him as it is for us.

I'm not a big fan of Thanksgiving.  There are always other places I would rather be on my day(s) off than in the kitchen with tom turkey roasting away.
Many Thanksgivings, I have traveled to either Myrtle Beach or NYC for a holiday, cooking-free, weekend.
I think that the best Thanksgiving was a couple of years ago, when I met up with Aussie Al Paige in NYC.  The weather was unseasonably warm, the hotel was wonderful, the walking and the shows were outstanding.
The worst Thanksgiving was definitely spent in Myrtle Beach, and it wasn't the food or the walking or the company which made it sad, bat a tragic death in our family.  My 43 year old cousin suffered a heart attack  before dinner, in Pennsylvania, and I was the first one to receive the news.  His mother and father had a house three houses down from our house on the beach, so their daughters called me to let me know to be prepared to spend time with my aunt and uncle.
The tale does have a comic side; Roseanna and I left Myrtle Beach on Sunday morning - my cousin's funeral would be on Monday - and drove quite quickly back to the 'burgh.  I got in the house, changed my clothes and drove down to the funeral home.  Only I went to the WRONG one!  There are two same-named funeral homes within a mile of each other, and I didn't hit the right one.  After visiting the grieving people at the wrong one, I made a hasty retreat and made it to the right one with only fifteen minutes of viewing time to spare!

Because a THOMASINA turkey is called a HEN.  And some cooks prefer the hen for serving over the tom, but both are eaten on Thanksgving

The story goes that the male turkey was nicknamed "Tom" by Benjamin Franklin as a not very flattering reference to Thomas Jefferson

The last couple of days have been quite busy.

Tuesday, my shift at the store ran until ten-thirty.  Fortunately, I was able to get a lot of shopping done during my lunch break, so everything was covered for the Thanksgiving dindin.  But, between cooking our dinners for Tuesday night and getting in some necessary wind-down time, I only got in about four hours sleep before having to get up and get going again, because Wednesday I had a long shift starting at eight in the morning.

And after getting off work, der B and I had to head up to Dover to pick up a couple of things he'd had on order.  That's a lengthy drive.  Then, we tried out a new fried chicken joint called Kickin' Chicken.  Der Brucer was less than thrilled.  I crashed early.

Today?  There's stuff I need to get made for dinner tonight before I head off to work.  Yes, I'm working on Thanksgiving.  I happen to enjoy it.  After the surging crowds of the last couple of days, Thanksgiving is nice and relaxed.  There's the people who come in for their pre-cooked Thanksgiving dinners from the Deli department.  There's the people who come in looking for those last couple of things they forgot they would be needing.  There's the husbands who have been sent out of the house by their wives basically to get them out of the house for a little while.  And it's a nice, congenial day at the store.

So, I'd better get the chestnuts cooked, and the taters boiled.  And I'm thinking it would be smarter to break down that duck, so I can cook the breasts when I get home and save the rest for later.  (American ducks don't roast well when you do them whole, it turns out, because there's too much fat in the breast to render out properly before the breast meat is correctly cooked.  French ducks roast well, because they have less fat, but we don't get French ducks in these parts.  C'est la vie.)

Good morning, all! It's a workday for me. My Thanksgiving was last Sunday, with my family and outside of my niece's Drama Queen conniption it was a wonderful day.

I am listening to the soundtrack for ENCHANTED that is all.

Joy of Cooking suggests steaming the onions, rather than boiling them, and then saucing them with a basic white sauce.  They use medium sized onions, rather than pearl, but I would expect the results would be quite nice either way.

For one cup of white sauce, a.k.a. Bechamel, melt 2 T butter over low heat.  Add and stir in 1 1/2 to 2 T flour, and cook for 3 to 5 minutes.  DO NOT LET THIS MIXTURE BROWN, KEEP THE HEAT LOW!  In other words, make a simple white roux.  Slowly stir in 1 C Milk or Cream.  Cook, stirring with a whisk or wooden spoon, until thickened and smooth.  (They also suggest placing the sauce in a 350 oven for 20 minutes to cook slowly, and then straining, but who has that much oven space on Thanksgiving?)

James Beard, in American Cookery, doesn't even mention them.

Good morning!

This is the last of our warm days - mid 60s for highs today. It rained a bit overnight (I didn't hear it at all), but it's going to be colder the rest of the week, it seems.
