When all I had to cook out on was an hibachi grill, I often put chicken breasts in a pan, added whatever seasonings and marinade I wanted, and put them in a slow oven (F 300 degrees)for about 30-45 minutes.

Then I'd take them out, pour off the marinade and then cook the chicken on the hibachi, adding any kind of sauce I might want to finish it with.  I considered this an essential procedure since the coals in the hibachi did not last long enough to cook raw chicken sufficiently through.  (It was a small hibachi!).

Has anyone here been to China?

I hear you can get there by slow boat.  Or, in DR Ron Pulliam's case, a slow oven.

Ah, another case of someone being depraved on account of his being deprived.

It's so funny you should mention this, because the other day in the Oregonian the Krupkes were celebrating their 50th anniversary, and Mr. Krupke was a retired (yep, you guessed it) police officer!

I am cooking some chicken on the BBQ tonight (grill outside).

I really have no clue (i'm emailing my mom after i type this to see what she thinks). I guess i would want to keep it on the grill for like 20 minutes max.

RECIPE CZAR advises:

Quote
Grill chicken until well browned on both sides, turning once, 30 to 40 minutes (meat near thigh bones should no longer be pink when tested with the tip of a knife).

FYI.

All grills are different temperatures so.

Take advantage of indirect heat --.

If the chicken browns to quickly finish over indirect heat.

All grills have hot spots so watch and be sure to move the chicken to make the cooking of the chicken complete and satisfying to your needs. As the time of the year make grilling quicker or slower. So take care and watch and enjoy you food as it grills.

Your very own FOOD TV CANADA advises:

Quote
The best way to judge doneness isto use a digital meat thermometer. Whole chicken should be cooked to 185F (85C), chicken pieces to 170F (77C) and ground chicken to 175F (80C).

der Brucer

(If when they come off of the grill, the joint is still bloody, pop it in the microwave for a minute or so.)

Well, if you were planning on putting it on the grill for 20 minutes after precooking it, you'd have some pretty over-cooked chicken.

I never cook chicken legs on the stovetop (only in the oven for 1 hour).

This is the same chicken that in the oven would take 1 hour at 375F.

I know if i just put it on the grill (for up to 20 minutes) that it would not be cooked.

My mom had 2 ideas. One was to boil it for 10 minutes first. The second was to bake it part way through.

The thing is i don't care if i only put it on the grill for 10 minutes. I just want it to be cooked!

Thanks for all the chicken advice/info.

I don't want to be out there for 40 minutes (which is how long i think it would take).  I don't have a meat thermometer (i really should get one).

But i do know how to tell if it's ready. So that at least is good.

I like the idea of baking it at 300F like DR RonP said. Although i'm not sure if i want to turn on the oven. I think it may be okay today. But it is supposed to get extremely hot here the next 2 days.

Does your grill have a lid?  If you can cover your grill, that would help things a bit.

Buy one of those aluminum pans and put your chickens inside, preferably on one of those cooling grills for cakes or draining pans inside roasters, and put on your grill and cover it when the coals are "almost" ready for cooking.  Let the pan stay there for about 30 minutes.  THEN, remove from grill, take the chicken and transfer to the actual grill.  Baste with whatever sauces you prefer and let it cook until done.  Since you are doing chicken legs, that won't take much more than 10-15 minutes or so.

3-1/2 HOURS OF FAMILY DYSFUNCTION - that should be a great title, shouldn't it?

When I was in Side Show, the guy playing Terry told me that he didn't like performing the song, "Private Conversation" because it was "Eight and a Half Minutes of Angst."  That could be the title of the prequel. ;)

I'm guessing he wouldn't enjoy performing any of Spring Awakening, either.   8)

Just got an e-mail announcing the first LA reading (READING) of a major new musical (part of the LA Festival) - The Times, by Brad Ross and Joe Keenan.  Say what?  NEW?  NEW?  I believe I recorded a song from this score back in 1995 or so, and I believe the show had been kicking around for years prior to that.  Also it had a few productions, I think.  A little peculiar, I think, but what do I know?

BK, Dennis would have been perfect in the Nudie show.  He absolutely adored that show!  Talked about it all the time.  He would have quit his job and survived somehow just to fly there to be in it.  I know he would have! *lol*

This might sound dumb, but don't all BBQs have lids?  I keep my food covered the whole time i grill.

I have those aluminum pans. But i did not really want to heat up the grill for that long.

But thanks for the tips.

DR DakotaCelt - Juilliard is at 66th and Broadway.  Levain is at 74th and Amsterdam.  Just eight blocks north, and one block over (east).

I have sent her the directions.... She has been exploring the area and is enjoying Juilliards....
