If I end up buying more fruit at the market than planned, I will usually bake up a very simple
crostata, fruit tart... -And, yes, I cheat and use the pre-made pie crusts from the grocery store. In any case...
Just place the pie crust on a cookie sheet, then sprinkle it lightly with some sugar, maybe even some cinnamon. Chop, dice up your fruit - stone fruits work particularly well, although berries do too. Place the fruit in the middle of the pie crust. Sprinkle the fruit with some more sugar if you like, and, if you feel like gilding the lily a bit, then dot it with a few pats of butter and/or a squirt of fresh lemon juice. Gather up the side of the pie crust around the fruit to form a "crust", just to hold everything in while it bakes. Pop the whole thing in a pre-heated oven, 400 degrees, and bake until the crust is a golden brown, and the fruit has started to release it's juices and bubble.
Serve with vanilla ice cream, of course!
