I made a Mexican bean salad today to serve to our company tomorrow. I remember telling Keith when we were at the market that I needed a red onion and walking in that direction. I wonder what distracted me that I never picked it up. I will have to get one tomorrow morning and add it.
Just as I was about to add corn to the salad I realized one of our guests, who is now on a gluten free diet, might not eat corn.
I put half the salad dressing in the bean & pepper mix and a little bit in the corn which is in a separate bowl. The rest of the dressing is waiting until I decide how to mix all of this.
