While the mushroom peelin was going on I had thinly sliced onion carmelizing in butter,

The mushroom got added to the pan and as they cooked fish I added more until they were all in there , then I added the rest of the stick of butter and sherry

Then that all simmered for a couple of hours. Just before we were ready to head over to my brothers for dinner I put the mushrooms in a big Pyrex casserole dish then thickened the pan juices with a little cornstarch mixture and outed that over the mushrooms.

I went to Jerry's - ten-fifteen - the take-out counter was jammed. Sorry, what in HELL is going on with people. JAMMED at ten-fifteen. It took twenty minutes to get my turkey sandwich. I brought it home and ate it - it was good.

I cheated big time on the second dish I was instructed to bring... Mashed potatoes. I bought the ready made ones from BJs. Heated three package of them in the microwave , put that in another Pyrex serving dish, mixed in a generous amount of onion butter and then sprinkled a little paprika on top

They were extremely talented mushrooms, it was almost a shame to eat them

The Easter dinner was the usual 4 westies running around trying to trip everyone, the SILs family all screaming at the top of their lungs about politics (which is really interesting because they all agree with each other) the TV blasting TMC trying to drown out the SILs family voices....

But the meal was good

Actually I fell asleep in the recliner when we got home so now I am awake....it doesn't bode well for the day ahead
