Wednesday morning greetings!
TOD - my own cooking. I've been pretty vocal over the last few years that I'd be happy never to cook another meal, but it was plain to me on March 12 that I'd have a renewed responsibility in that area of our lives. So far, it hasn't been bad, but I do have to say I really miss going to a restaurant had having someone bring me a meal I didn't have to think up, shop for, prepare, and clean up after.
One of my strategies is to cook something that will yield leftovers that can be frozen. Right now, there's half of a cooked pork roast in our freezer. We enjoyed the first half as a meal and as sliced pork barbecue and, eventually, I'll thaw what's left and figure out something to do with it. Today, we'll finish up the meat loaf I made on Sunday. We also try to order from a local restaurant at least once a week, so that may be coming up tomorrow or Friday.
