I just attended virtual Shabbat services at a Chicago synagogue. Some of the musical settings featured a person playing what I learned is an EVI, or electronic valve instrument. You blow into it, I think, and then work the valves to play the various notes. It sounded variously like a cello, a clarinet, and various other things. I don't know if it was different devices to mimic the different instruments, or if the sound is altered electronically. It was kind of intriguing.
