I checked out a Chilean cookbook from the library called, appropriately enough, The Chilean Kitchen. it has several recipes of traditional dishes that I tried on my visit there, and many more that I want to try. But it is a most perverse cookbook in terms of the recipes matching up with the photos. They don't.
In one recipe, the writer tells us to not use cast-iron because it will react with the tomatoes, so the photo, of course, features the dish in a cast-iron skillet. In another recipe, the dish is to be inverted onto a serving plate so that the cooking slows down by being out of the hot pan; it is photographed served straight from the pan. And so on. It's really strange.
