This morning I had a tomato that had to be used, and two avocados which felt about ready. And a couple (see above) slices of some great bread. So I hatched a brilliant idea. I cut the tomato into thick slices, heated some olive oil in a pan, and put the tomato slices in. While side one was cooking over a low flame, I sprinkled liberally with dried herbs, granulated garlic, and salt & pepper. (I wanted some grated parmesan which we usually have, but we didn't this time.) I turned the tomatoes over and sprinkled side two, gave them a couple more minutes on the flame, and voila! - I had some form of grilled tomatoes on my plate. I then toasted the bread and mashed an avocado on it. I've never had actual avocado toast, but I suppose this served as a form of that, too. I laid the tomatoes on the slices of toast, and ate them. And OMG. Delicious.
