School is back in session. Another half hour added to my driving time.

Well, Access-a-Ride fucked me over, and I've rescheduled my trips for tomorrow. Here's my saga:
Scheduled pickup time: 8:39am
8:25 phone call: driver will arrive in 12 minutes (8:37)
8:39 phone call: driver will arrive in 7-10 minutes (8:49?)
8:50 phone call: driver will arrive in 15 minutes 9:05)
8:53 phone call: cancel my trips for today

Wish you could win the lottery so you'd never have to deal with Access-A-Ride ever again.

Toast (15-grain bread) with butter and garlic honey. It’s what’s for breakfast.

Sorry to hear about the AaR screwup, DR Elmore. I still fail to understand that operation.

It’s such an aggravating situation, because it seems that when they perform well, they’re every bit the wonderful organization they’re supposed to be.

TOD

I would probably eat just about any mac-and-cheese you set in front of me. (As long as it’s not too runny. Can’t stand that.)

I’m done with the Kraft packaged varieties and most any other prepared kinds, but anything good made from scratch is usually wonderful. I really should re-learn how to make a decent one myself, something I haven’t done in years.

My mother’s always included some canned tomatoes, so for years I thought that’s just how it was always done. I want to make that again myself for old time’s sake. But the bacon variety sounds like absolute heaven.

I think my favorite mac and cheese (although I like them all, even what I make) is from the local Gray Bros. Cafeteria.....

I think it must be baked because there is always a nice brown crust on top....and it is very creamy.

You know, I think there’s something about cafeteria mac and cheese in general that “just works”. And YES to the crust!

I JUST ATE TWO MORE SLICES.

Of the garlic honey toast, in case anyone had forgotten.

Well, these aren’t huge slices of bread. And it’s a treat. Do I not deserve a treat? I ask you.

Plus, in so doing, I completely polished off the stick of butter and the honey. So we’re moving on. And I shan’t feel the need to eat for a while.

Before my mother went off the deep end, she made fantastic mac'n'cheese, along with a lot of wonderful things from donuts to popcorn balls. I remember little about it now because her downhill slide began sometime after 1957 when I was eleven. Anyway, all I remember is her baking it in a large casserole dish and it came out of the oven with a nice brown crust on top, and it was not a runny mac'n'cheese but a rather firmly packed one. By 1960 or so, her days of wonderful baking and cooking were pretty much over except for family events where she pulled herself together to prove she wasn't a mess.

About three years ago, I bought from Amazon a ceramic water dish for the cats that I really loved. Two days ago I broke it, and Amazon no longer carries them. I am heartbroken.

Good Morning - I'm off to work again today.  Yesterday was not very productive for a lot of reasons which just had to happen.  Today will be better, although the AC in my room is down.  That always happens right before school starts.. I hope they get it fixed before the kids arrive on Monday.  Other than that, it's business as usual.

VIBES to DR Elmore that he gets his medicade worked out.

I like Patti LaBelle’s mac and cheese, which has egg helping hold it together. Sounds strange, I know, but it also gave it a sort of custardy quality. It calls for four cheeses and Velveeta. It was rich without being heavy.

TOD - I love Mac and Cheese, but I hardly ever eat it because there are just too many carbs!  The GF versions out there can be very good and that sorta reduces the carb count.  However, sometimes you just gotta do the entire thing -  carbs and all.  I like boxed Mac and Cheese, it's just the best - and I use the entire cheese packet!  My grandmother used to only use half.
