My most favorite Italian dish, at the moment, is Spaghetti Carbonara. The first time i had it was in Naples, Italy. I had it many times there. That was in the mid-70s.
I later found it on the menu at a now-closed Berkeley CA restaurant called Venezia. I took a chance on it, and was richly rewarded. I went there many times before their doors closed.
I love eggplant parmesan and tortellini a la Bolognese. I love a wonderful antipasti bar with many different delights upon it.
The best pizzas I ever had were in Italy. In Vicenza, I discovered the wonders of calzone, filled with prosciutto (ham), funghi (mushrooms) and formaggio (cheese).
In Naples, I once had a meal at the birthplace of the Pizza Margherita. Sheer heaven. The pizzeria is still intact and open, and the Margherita is its claim to fame because they invented it for a queen (back when Naples was a kingdom). Another favorite is the pizza Quattro Stagione (four seasons). One quarter prosciutto, one quarter funghi, one quarter olive nero (black olives), and one quarter carciofi (artichokes). My mouth waters just typing the words.
I love Italian food in general, but those are my very favorite dishes.
