Most of our pasta cooking comes from recipes in either Marcella Hazan's cookbooks or one by her son Guiliano. She doesn't include a cacio e pepe recipe, so that comes from a David Kinch cookbook. There was also a good YouTube video that got me close before Kinch's more precise quantities helped get me there.

I once assisted Guiliano in a cooking class back in Sarasota.

Awesome! Did you used to live in Sarasota? Did you get to meet Marcella when she was there? My Dad has been in Sarasota for a long time and my stepmother got to meet Marcella and Guiliano there.

I never got to meet her.

But I'm wearing it with pride. Like a tie-dye gone bad.

That original Dune does have a 4K disc available to purchase, but that release only includes the 4K disc, and not a Blu-ray disc, so I got the Blu-ray release since I don't have a 4K player, even though my TV is able to display 4K images.
