I love the idea of canned foods -- for storage, ease of use, definitely some easy and favorite items here and there, all the reasons. I think the one negative is how they are such sodium bombs. But so are many other types of prepared/processed foods. So I try to remain cognizant of that and consume such things in moderation. Not that MY idea of moderation is any kind of model! But I do try to think about these things.

A few favorites? I always keep a couple of cans of Hormel no-beans chili around for adding to various and sundry things. Campbell's tomato, bean, cream of chicken, cream of celery, and I love a few of their more deluxe chunky varieties. Progresso's split pea with (what is it, ham? bacon? I forget, but I think it's the most delicious canned pea soup). Black eyed peas. Collard greens. A couple of types of canned tomatoes in case I need to high-tail it out of Yonkers. Sloppy Joe mix, for when I'm too lazy to make my own. Canned peaches. Oh hell, there are probably a lot of things I'm not thinking of. Oh, how about those little cans of Underwood Deviled Ham? I loved that stuff as a kid and I indulge now and then. I could go on...

The first SpongeBob was a one-week affair with full hired pit plus their more talented kids participating...28 musicians in all. What a pleasure that was, and that quirky score shined. That was at a middle school, so, way younger kids than most of us are used to, but they were so professional and full of character our jaws were on the floor.

This one is a high school that does very good work and will have much more developed singing, but the full pit will be all students except for two keyboards and two guitars. I think they're skipping the third keyboard. So, no one-week affair there, they've been working on it for a while. I do look forward to seeing the similarities and differences between the productions.

TOD:

Beans are more convenient from a can than soaking them overnight, then cooking them sometimes for hours before they’re done. I’m especially thinking of canned white beans that are sometimes needed in salads or soups.

I love canned Skyline Chili.

Canned corn makes it easy for me to have Mexican street corn.

I’m not big on canned cherries anymore. It’s usually more cornstarch goo than actual cherries. Same with canned gooseberries. Canned peaches are slimy. But I like what I can do with canned pineapple.

I always have canned milk and sweetened condensed milk on hand. I don’t use a lot of fresh milk unless I know I am making something in advance. That prevents some last-minute trips to the store.

Sadly, my back is to it in both venues. And as it turned out, I would really liked to have seen that younger production.

At this upcoming one I have the autonomy of tweaking it a bit, and will do so.

DR John G. reminds me of Skyline chili in cans. Essential!
And when I have it around, I keep cans of "small red beans" which are perfect for that.

You know what those slimy cans of peaches are good for? When you have a bout of diverticulitis-type belly-aching going on, and that's all you want to eat.  :)
