Chili dogs are an abomination and a sin against frankfurters.

ALL frankfurters must be grilled, served on a very nice roll, preferably lighly toasted and graced solely with spicy brown mustard and sauerkraut . Adding rye seeds to the sauerkraut is acceptable .

American cheese is okay for grilled cheese but it should sliced fresher from the deli counter, not that cheese food stuff

New York extra sharp cheddar is lovely on crackers or sandwiches and melted on burgers. Shredded it is lovely in quesadillas, as a topping for chili or potato soup or on a baked potatoe

Mozzarella is necessary for pizza, lasagna , baked ziti, chicken or meatball Parmesan ( I know , it's called parmesean but you use mozzarella )

Ricotta is needed in baked ziti and lasagna and ravioli and manicotti and that wonderful stuffed chicken florentine with a brown wine sauce at that amazing Italian restaurant I didn't eat at often enough and now it closed

Cream cheese is an absolute for so many recipes, a must on bagels , especially toasted onion bagels and loveky on toasted ritz crackers

Cottage cheese is very nice as a side with a hit grilled unadorned burger as a substitute for a bun. Also very nice with pea head strawberries and blueberries

Cotswold is my favorite cheese when made correctly. It should be smooth, not dry.

I woke up this morning with a pulled muscle in my left foot. It was fine when I went to bed last night. Sigh. I've been taking Arnica, but now it's swelling. I'm icing it. I don't think it's anything serious, but it definitely is an annoyance.

Processed, yes, but for those of us who can't eat cheese a welcome option.
