My favorites are broccoli and cauliflower, steamed with a little butter and also a little lemon on the broccoli, but I also love broccoli in Chinese dishes.
My Appalachian grandmother's fried cabbage was to die for, as were her pickled green beans and corn.
I make great vegetable beef soup with tomatoes, onion, potatoes, cabbage, cauliflower, green beans, corn, celery, peas, and carrots, and my chicken soup always has potatoes, celery, peas, and carrots.
I also love fried onion rings, but they are a hard commodity to find cooked well.
